Claims
- 1. An apparatus for processing meat, said apparatus including:
a cutting device operable for cutting meat into pieces with the pieces having opposite sides; a conveyor for transferring the cut meat; and a cleaning device, said cleaning device including at least one first nozzle operable for directing a stream of fluid from the nozzle onto a cut surface of the meat in a direction to forcibly remove cutting residue from a first cut surface of the meat while the meat is being moved by said conveyor.
- 2. The apparatus as set forth in claim 1 including a source of pressurized liquid connected to said at least one first nozzle and further including at least one second nozzle located downstream of the at least one first nozzle operable for directing a stream of gas onto the first cut surface of the meat, said second nozzle being connected to a source of pressurized gas.
- 3. The apparatus as set forth in claim 2 including at least one first nozzle directed at a second cut surface of the meat and operable to direct a stream of fluid onto said second cut surface of the meat.
- 4. The apparatus as set forth in claim 3 including at least one second nozzle directed at the second cut surface of the meat downstream of the at least one first nozzle directed at the second cut surface of the meat and operable for directing a stream of gas into the second cut surface of the meat.
- 5. The apparatus as set forth in claim 4 including a device for applying a liquid to the first and second cut surfaces of the meat downstream of the at least one second nozzle.
- 6. The apparatus as set forth in claim 4 wherein said conveyor includes an open weave conveyor belt portion in the cleaning device with an upper run for carrying cut meat, said conveyor belt portion having an upper face and a lower face.
- 7. The apparatus as set forth in claim 6 wherein at least one first nozzle and at least one second nozzle are positioned on each of the opposite sides of the upper run.
- 8. The apparatus as set forth in claim 6 wherein said at least one first nozzle is directed at an angle in the range of between about 30° and about 90° relative to the plane of the upper run.
- 9. The apparatus as set forth in claim 2 including a catch pan associated with the cleaning device and operable to collect liquid discharged from the at least one first nozzle.
- 10. An apparatus for cleaning a cut surface of meat, said apparatus including:
a housing, said housing having an entry end and an exit end; a conveyor positioned in the housing for transferring cut meat in a direction from the entry end to the exit end, said conveyor having an upper run for carrying cut meat; at least one first nozzle positioned adjacent said conveyor and operable for directing a stream of fluid from the nozzle onto a cut surface of meat, said stream directed in a direction to forcibly remove cutting residue from a first cut surface of the meat while the meat is being moved by said conveyor.
- 11. The apparatus as set forth in claim 10 including a source of pressurized liquid connected to said at least one first nozzle and further including at least one second nozzle downstream of the at least one first nozzle operable for directing a stream of gas onto the first cut surface of the meat, said second nozzle being connected to a source of pressurized gas.
- 12. The apparatus as set forth in claim 11 wherein at least one first nozzle is directed at a second cut surface of the meat and is operable to direct a stream of liquid onto said second cut surface of the meat.
- 13. The apparatus as set forth in claim 12 wherein at least one second nozzle is directed at the second cut surface of the meat downstream of the at least one first nozzle directed at the second cut surface of the meat and is operable for directing a stream of gas unto the second cut surface of the meat.
- 14. The apparatus as set forth in claim 13 including a device for applying liquid to the first and second cut surfaces of the meat downstream of the at least one second nozzle.
- 15. The apparatus as set forth in claim 13 wherein said conveyor includes an open weave conveyor belt portion with an upper run for carrying cut meat, said conveyor belt portion having an upper face and a lower face.
- 16. The apparatus as set forth in claim 15 wherein at least one first nozzle and at least one second nozzle are positioned on opposite sides of the upper run.
- 17. The apparatus as set forth in claim 15 wherein said at least one first nozzle is directed at an angle in the range of between about 30° and about 90° relative to the plane of the upper run.
- 18. The apparatus as set forth in claim 11 including a catch pan associated with the housing and operable to collect liquid discharged from the at least one first nozzle.
- 19. A method of processing meat comprising the steps of:
cutting meat to form a discreet piece having first and second surfaces, said cutting forming residue on at least the first surface; transferring the cut piece of meat to a cleaning station; impinging a first stream of fluid from a nozzle onto at least said first surface; and moving said cut piece of meat relative to said nozzle while impinging said first stream of fluid onto at least said first surface so as to remove at least a portion of said cutting residue from said first surface.
- 20. The method as set forth in claim 19 including impinging a second stream of fluid onto said second surface for removal of cutting residue.
- 21. The method as set forth in claim 20 wherein said first and second streams are directed at the cut piece of meat from opposite sides thereof.
- 22. The method as set forth in claim 19 wherein said first stream of fluid includes liquid.
- 23. The method as set forth in claim 22 including impinging a third stream of gas onto the first surface after impinging the first surface with the first stream of fluid to remove retained liquid from the first stream from the first surface.
- 24. The method as set forth in claim 20 wherein said first and second streams of fluid each include liquid.
- 25. The method as set forth in claim 24 including impinging a third stream of gas onto the first surface after impinging the first surface with the first stream of fluid and impinging a fourth stream of gas onto the second surface after impinging the second surface with the second stream of fluid to remove retained liquid from the first and second streams from the first and second surfaces.
- 26. The method as set forth in claim 25 wherein the liquid in the first and second streams includes water with a temperature of less than about 70° F.
- 27. The method as set forth in claim 26 wherein the gas in the third and fourth streams includes air with a temperature of less than about 55° F.
