Claims
- 1. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- said machine having a housing including an access opening closed by a door, said receptacle having a cartridge receiving position adjacent said access opening, said means for dumping food product out of said basket including means for inverting the basket over the receptacle when in the cartridge receiving position;
- said means for dumping food into said basket including means for inverting the receptacle over the basket while the basket is within said cooking vat;
- the means for inverting the basket additionally including means for rocking the frying basket back and forth to dislodge food adhering to the frying basket.
- 2. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- said machine having a housing including an access opening closed by a door, said receptacle having a cartridge receiving position adjacent said access opening, said means for dumping food product out of said basket including means for inverting the basket over the receptacle when in the cartridge receiving position;
- said means for dumping food into said basket including means for inverting the receptacle over the basket while the basket is within said cooking vat;
- the basket inverting means additionally including means for holding the frying basket in a stationary position above the cooking vat for a brief period of time prior to dumping the cooked food to allow drainage of excess oil.
- 3. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- said machine having a housing including a door for closing the access into the machine through which the cartridge is passed, said receptacle having a cartridge receiving position adjacent said access opening, said means for dumping the food into the basket including means for inverting the receptacle over the basket;
- the cooking vat including a closeable lid for sealing the cooking vat from the surrounding environment during a frying cycle and when the apparatus is not in use;
- said means for inverting the receptacle and said means for dumping the basket including means for automatically opening the lid before the food is transferred to or from the frying basket and closing the lid after transfer is complete.
- 4. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- the cooking vat including a closeable lid for sealing the cooking vat from the surrounding environment during a frying cycle and when the apparatus is not in use;
- the means for automatically dumping the cooked food out of the basket including means for automatically opening the lid of the cooking vat before the frying basket is removed from the cooking vat and closing the lid thereafter.
- 5. The apparatus of claim 4 including means for replenishing the air within the machine and exhausting the air from the housing, the replenishing means including a microcoalescing filter, a media filter and an activated charcoal filter, the sealed cooking vat reducing the quantity of fumes that must be filtered.
- 6. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- a bottom drain for draining cooking oil from the cooking vat and a bottom drain seal positioned on the bottom of the frying basket such that when the frying basket is positioned within the cooking vat the bottom drain will be sealed and when the frying basket is removed from the cooking vat the oil will be rapidly drained from the cooking vat.
- 7. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- said machine having a housing including an access opening closed by a door, said receptacle having a cartridge receiving position adjacent said access opening, said means for dumping food product out of said basket including means for inverting the basket over the receptacle when in the cartridge receiving position;
- said means for dumping food into said basket for cooking and means for automatically dumping the cooked food into the cartridge comprising:
- a cam wheel having a dumping arm rigidly mounted thereon, the cam wheel powered for clockwise and counterclockwise rotation, the dumping arm extending outwardly a distance sufficient to engage the receptacle during rotation of the cam wheel in one direction and pivot the receptacle into an inverted position above the cooking vat for dumping food into the basket, the dumping arm extending outwardly a distance sufficient during rotation of the cam wheel in the other direction to pivot the basket into an inverted position above the receptacle at the cartridge receiving position for dumping food from the basket into the cartridge within the receptacle;
- means for rotating the cam wheel in one direction to invert the receptacle after a cartridge of food has been inserted over the receptacle for dumping food into the cooking vat; and
- means for rotating the cam wheel in the opposite direction after a predetermined cooking time to invert the basket over the receptacle.
- 8. The apparatus of claim 7 further characterized by said means for automatically dumping the cooked food into the basket including means for oscillating the direction of the rotation of the cam wheel to rock the basket back and forth to release food which may adhere to the basket.
- 9. The apparatus of claim 7 wherein the cooking vat includes a lid pivotally mounted thereon to seal the cooking vat during use, and including a lid linkage mechanism for raising the lid to provide access to the cooking vat and means for actuating the lid linkage mechanism during inverting of the receptacle and frying basket to allow moving of food products into and out of the cooking vat.
- 10. A cooking machine for handling food stored in a cartridge, the machine having a cooking vat, a basket for holding the food in the vat, hot oil in the vat for cooking the food, and a mechanism for removing the basket from the vat, characterized by:
- the cartridge having a sealed removable cover, the cartridge holding an individual-sized portion of food product during packing, storing, transporting, handling in the cooking machine and finally serving;
- said machine including a receptacle for holding an open cartridge inserted by the user into the machine, means for automatically dumping the food out of the cartridge into the basket for cooking, means for automatically dumping the cooked food out of the basket back into the cartridge, and means for signalling when the cooked food is returned to the cartridge for removal of the cartridge by the user;
- said cooking vat having a relatively small volume and an excess oil drain, the machine further including a large volume hot oil reservoir, said reservoir having a volume many times greater than said cooking vat volume, the oil temperature of said reservoir being slightly greater than the desired cooking temperature, and means for continuously circulating a large volume of hot reservoir oil through said vat and drain to immerse the food product in a large flow of hot oil to maintain a uniform cooking temperature.
- 11. The apparatus of claim 10 wherein the cooking oil circulating means includes a removable filter for filtering oil traveling between the cooking vat and the oil reservoir.
- 12. A customer operated apparatus for frying food in cooking oil, the food stored in an individual-portion sized cartridge having a removable cover, which comprises:
- a housing;
- a receptacle for receiving and holding said cartridge with said cover removed and containing said food inserted into the housing by the customer;
- a small volume cooking vat having a frying basket therein for holding food;
- an oil circulation system comprising:
- an oil reservoir for storing a large volume of heated cooking oil, the reservoir volume being many times greater than the smaller volume cooking vat;
- a heating element within the oil reservoir for heating cooking oil stored within the oil reservoir to a temperature slightly above the cooking temperature for frying the food;
- means for continuously circulating cooking oil from the oil reservoir through the cooking vat during a cooking cycle and back into the oil reservoir to flood the product with continuously replenished hot oil;
- means for transferring food from the cartridge within the receptacle into the frying basket for frying in hot cooking oil; and
- means for removing the frying basket and food contained therein from the cooking vat after a predetermined cooking time and returning the cooked food to the cartridge within the receptacle for removal and consumption by the customer.
- 13. The apparatus of claim 12, further including means for covering said large volume oil reservoir and said cooking vat during a cooking cycle.
- 14. The apparatus of claim 12, further characterized by said cooking vat having a first excess oil drain for flowing the oil through the vat, a second safety drain higher than the excess oil drain, and a third vat emptying drain for rapidly flushing the vat free of oil and food particles after each cooking cycle.
- 15. The apparatus of claim 12 further characterized by there being a plurality of cooking vats, said means for circulating the hot oil from the reservoir circulating the oil to the vats simultaneously.
- 16. An apparatus for automatically frying food in heated cooking oil which comprises:
- a housing;
- a cooking vat contained within the housing, the cooking vat containing heated cooking oil to allow frying of the food therein, the cooking vat including a lid for covering the cooking vat to reduce the amount of oil fumes emitted into the housing and minimize oxidation of the cooking oil within the cooking vat, the lid lifting to allow access to the cooking vat when necessary;
- means for automatically dumping food into the cooking vat and removing the food from the cooking vat when frying is complete;
- the cooking vat lid is pivotally mounted on the cooking vat to cover the cooking vat during use, and access to the cooking vat is provided by a lid linkage mechanism which is actuated by the automatic dumping and removing means.
- 17. An apparatus for automatically frying food in heated cooking oil which comprises:
- a housing;
- a cooking vat contained within the housing, the cooking vat containing heated cooking oil to allow frying of the food therein, the cooking vat including a lid for covering the cooking vat to reduce the amount of oil fumes emitted into the housing and minimize oxidation of the cooking oil within the cooking vat, the lid lifting to allow access to the cooking vat when necessary;
- means for automatically dumping food into the cooking vat and removing the food from the cooking vat when frying is complete;
- means for replenishing the air supply within the housing, the replenishing means including a micro-coalescing filter, a media filter and an activated charcoal filter which combine with the cooking vat lid to reduce the quantity of fumes emitted into the environment outside of the housing.
- 18. An apparatus for handling an open top cartridge having an individual-sized portion of food stored therein, the apparatus comprising:
- a cooking vat containing a cooking medium;
- a basket for holding the food in the vat;
- a receptacle for holding a cartridge, the receptacle being accessible from the exterior of the apparatus to allow insertion of a cartridge therein;
- means for automatically dumping the food out of the cartridge and into the basket for cooking;
- means for automatically dumping the cooked food out of the basket and back into the same cartridge; and
- means for signalling when the cooked food is returned to the cartridge for removal by a user of the apparatus.
- 19. The apparatus of claim 18, wherein the means for dumping the food back into the same cartridge includes means for retaining the basket of food above the vat for a predetermined draining period to enable the cooking medium to drain from the food into the vat.
- 20. The apparatus of claim 19 wherein the basket is temporarily retained in a stationary position above the vat.
