Claims
- 1. A method for reducing the viscosity of alternan comprising contacting a solution of alternan with an amount of alternanase effective for catalytic endo-hydrolytic cleavage of said alternan.
- 2. The method of claim 1 wherein said alternanase is produced by a bacterium selected from the group consisting of NRRL B-21189, NRRL B-21190, NRRL B-21191, NRRL B-21192, NRRL B-21193, NRRL B-21194 and NRRL B-21195.
- 3. The method of claim 1 wherein said alternanase is produced by NRRL B-21195.
- 4. The method of claim 1 wherein said alternanase comprises a cell-free composition.
- 5. The method of claim 1 wherein said alternanase is substantially pure.
- 6. A composition comprising reduced viscosity alternan produced by the process of claim 1.
- 7. The composition of claim 6 wherein the viscosity of said solution of alternan has been reduced by at least 10%.
