Claims
- 1. A conched chocolate produced by a process including a conching operation, the process comprising the steps of:
- passing ingredients for making chocolate, including chocolate refinings, into a conching apparatus having agitators and a motor controlled by a variable speed drive;
- moving the conching agitators into and through the ingredients, said moving step including moving the conching agitators at a conching agitator speed;
- conching said ingredients by continuing said moving step for a length of time until the ingredients produce a chocolate product;
- monitoring viscosity of the ingredients during the moving step in order to generally continuously detect an ingredients viscosity;
- modulating said conching agitator speed to provide a variable conching agitator speed which substantially maintains a predetermined power input to the ingredients substantially throughout said conching step, said modulating step being substantially ongoing, the conching agitator speed being a function of the ingredients viscosity monitored during said monitoring step such that the conching agitator speed increases as said ingredients viscosity decreases and such that said conching agitator speed decreases as said ingredients viscosity increases, whereby said predetermined power input is maintained substantially constant substantially throughout the conching step;
- controlling the length of time of the conching step in response to the monitoring step whereby a finished chocolate product is provided having a preselected maximum viscosity characteristic; and
- removing the finished chocolate product from the conching apparatus.
- 2. The conched chocolate in accordance with claim 1, wherein said varying of conching time includes reducing conching time by ceasing the conching step as soon as the preselected maximum viscosity characteristic is achieved.
- 3. The conched chocolate in accordance with claim 1, wherein the process substantially eliminates any need to standardize the finished chocolate after said removing step.
- 4. The conched chocolate in accordance with claim 1, wherein the process includes standardizing the finished chocolate to preselected chocolate characteristics, said standardizing being completed within the conching apparatus and prior to said removing step.
- 5. The conched chocolate in accordance with claim 1, wherein the variable speed drive has a power rating between about 2 and about 3 times the power rating of the motor, and wherein during said monitoring step said variable speed drive component receives feedback of varying ingredients viscosity encountered by the conching agitators, and during said modulating step said drive varies rotation speed of the motor in accordance with the varying ingredients viscosity.
- 6. The conched chocolate in accordance with claim 1, wherein said moving step includes subjecting the ingredients to an ordered sequence of phases including a dry phase, a tough plastic phase, a soft plastic phase and a liquid phase.
- 7. The conched chocolate in accordance with claim 6, wherein the conching agitators rotate in a first direction during the tough plastic phase and rotate in a second direction opposite of said first direction during the soft plastic phase.
- 8. The conched chocolate in accordance with claim 1, wherein said modulating step substantially maintains the predetermined power input at approximately 100% of the rated power of the motor.
- 9. The conched chocolate in accordance with claim 1, wherein the conched chocolate had not been standardized after removal of the chocolate from the conching apparatus.
- 10. The conched chocolate in accordance with claim 1, wherein the conched chocolate had been standardized within the conching apparatus and prior to removal of the chocolate from the conching apparatus.
- 11. The conched chocolate in accordance with claim 1, wherein said finished chocolate product has a reduced fat content which achieves said preselected maximum viscosity characteristic, said fat content being less than the fat content of a conched chocolate produced by an otherwise substantially identical process which omits said controlling step.
- 12. The conched chocolate in accordance with claim 1, wherein said finished chocolate product includes a fat source, and said finished chocolate product has no additional fat source in excess of that needed to impart said preselected maximum viscosity characteristic thereto.
- 13. The conched chocolate in accordance with claim 11, wherein said finished chocolate product includes only an amount of a fat source which is needed in order to standardize same to exhibit said preselected maximum viscosity characteristic and said reduced fat content.
- 14. The conched chocolate in accordance with claim 12, wherein said finished chocolate product includes only an amount of said fat source which is needed in order to standardize same to exhibit said preselected maximum viscosity characteristic and said reduced fat content.
- 15. The conched chocolate in accordance with claim 11, wherein said finished chocolate product had not been subjected to post-conching standardization and wherein said reduced fat content is lower than otherwise substantially identical finished chocolate products which had been subjected to post-conching standardization that includes addition of fat source.
- 16. The conched chocolate in accordance with claim 12, wherein said finished chocolate product had not been subjected to post-conching standardization and wherein said finished chocolate product has a reduced fat content which is lower than otherwise substantially identical finished chocolate products which had been subjected to post-conching standardization that includes addition of fat source.
- 17. The conched chocolate in accordance with claim 11, wherein said fat content is from a fat source including cocoa butter.
- 18. The conched chocolate in accordance with claim 12, wherein said fat source is cocoa butter.
- 19. A conched chocolate produced by a process including a conching operation, the process comprising the steps of:
- passing ingredients for making chocolate, including chocolate refinings, into a conching apparatus having agitators and a motor controlled by a variable speed drive;
- moving the conching agitators into and through the ingredients, said moving step including moving the conching agitators at a conching agitator speed;
- conching said ingredients by continuing said moving step for a length of time until the ingredients produce a chocolate product;
- monitoring resistance to conching by the ingredients generally throughout the moving step in order to generally continuously detect resistance of the ingredients to conching;
- modulating said conching agitator speed to provide a variable conching agitator speed which substantially maintains a predetermined power input to the ingredients substantially throughout said conching step, said modulating step being substantially ongoing, the conching agitator speed being a function of the ingredients resistance monitored during said monitoring step such that the conching agitator speed increases as said ingredients resistance decreases and such that said conching agitator speed decreases as said ingredients resistance increases, whereby said predetermined power input is maintained substantially constant substantially throughout the conching step;
- controlling the passing step in response to the monitoring step whereby a finished chocolate product is provided having a fat percentage within a preselected range, said controlling of the passing step varying the fat content of the ingredients; and
- removing the finished chocolate product from the conching apparatus.
- 20. The conched chocolate in accordance with claim 19, wherein said step of varying the fat content includes incorporating cocoa butter in an amounting which varies as a function of said monitoring step, said amount being adequate, but not substantially in excess of that needed, to impart said fat percentage to the finished chocolate.
- 21. The conched chocolate in accordance with claim 20, wherein the process substantially eliminates any need to standardize the finished chocolate after said removing step.
- 22. The conched chocolate in accordance with claim 19, further including controlling the length of time of the conching step in response to the monitoring step whereby the finished chocolate product also has a preselected maximum viscosity characteristic.
- 23. The conched chocolate in accordance with claim 22, wherein said varying of conching time includes reducing conching time by ceasing the conching step as soon as the preselected maximum viscosity characteristic is achieved.
- 24. The conched chocolate in accordance with claim 19, wherein the process substantially eliminates any need to standardize the finished chocolate after said removing step.
- 25. The conched chocolate in accordance with claim 22, wherein the process includes standardizing the finished chocolate to preselected chocolate characteristics, said standardizing being completed within the conching apparatus and prior to said removing step.
- 26. The conched chocolate in accordance with claim 19, wherein said moving step includes subjecting the ingredients to an ordered sequence of phases including a dry phase, a tough plastic phase, a soft plastic phase and a liquid phase.
- 27. The conched chocolate in accordance with claim 26, wherein the conching agitators rotate in a first direction during the tough plastic phase and rotate in a second direction opposite of said first direction during the soft plastic phase.
- 28. The conched chocolate in accordance with claim 19, wherein said modulating step substantially maintains the predetermined power input at approximately 100% of the rated power of the motor.
- 29. The conched chocolate in accordance with claim 19, wherein the conched chocolate had been standardized within the conching apparatus and prior to removal of the chocolate from the conching apparatus.
- 30. A conched chocolate produced by a process including a conching operation, the process comprising the steps of:
- passing ingredients for making chocolate into a conching apparatus having agitators which move in a manner to engage the ingredients, the ingredients making a refined chocolate intermediate including chocolate liquor, a sweetening agent and cocoa butter;
- moving the conching agitators to engage the ingredients with each other and with the conching agitators, said moving step including moving the conching agitators at a conching agitator speed;
- conching said ingredients by continuing said moving step whereby the refined chocolate intermediate is transformed into a flowable chocolate;
- monitoring resistance to conching by the ingredients generally throughout the conching step in order to substantially continuously detect resistance of the ingredients to conching;
- modulating said conching agitator speed to provide a variable conching agitator speed which substantially maintains a predetermined power input to the ingredients substantially throughout said conching step, said modulating step being substantially ongoing, the conching agitator speed being a function of the ingredients resistance monitored during said monitoring step such that the conching agitator speed increases as said ingredients resistance decreases and such that said conching agitator speed decreases as said ingredients resistance increases;
- controlling the passing step, the conching step or both in response to the monitoring step, said controlling of the passing step includes incorporating cocoa butter in an amount which varies as a function of said monitoring step, said amount being adequate, but not substantially in excess of that needed, to impart a fat percentage within a preselected range to the flowable chocolate product, and said controlling of the conching step reduces the conching time by ceasing the conching step as soon as a preselected maximum viscosity characteristic is achieved; and
- removing the flowable chocolate product from the conching apparatus.
- 31. The conched chocolate in accordance with claim 30, wherein at least some of the cocoa butter incorporated is added during said conching step.
- 32. The conched chocolate in accordance with claim 30, wherein said controlling step is completed within the conching apparatus and prior to said removing step, whereby the flowable chocolate product is standardized within the conching apparatus.
- 33. The conched chocolate in accordance with claim 30, wherein said moving step includes subjecting the ingredients to an ordered sequence of phases including a dry phase, a tough plastic phase, a soft plastic phase and a liquid phase, and wherein the conching agitators rotate in a first direction during the tough plastic phase and rotate in a second direction opposite of said first direction during the soft plastic phase.
- 34. The conched chocolate in accordance with claim 30, wherein said modulating step substantially maintains the predetermined power input at approximately 100% of the rated power of a motor effecting said moving step.
- 35. The conched chocolate in accordance with claim 30, wherein the conched chocolate had been standardized within the conching apparatus by completing the controlling step prior to the removing step.
- 36. A conched chocolate produced by a process including a conching operation, the process comprising the steps of:
- passing ingredients for making chocolate, including chocolate refinings, into a conching apparatus having agitators and a motor controlled by a variable speed drive;
- moving the conching agitators into and through the ingredients, said moving step including moving the conching agitators at a conching agitator speed;
- conching said ingredients by continuing said moving step for a length of time until the ingredients produce a flowable chocolate product;
- monitoring resistance imparted to conching by the ingredients generally throughout the moving step in order to generally continuously detect resistance of the ingredients to conching;
- modulating said conching agitator speed to provide a variable conching agitator speed which substantially maintains a predetermined power input to the ingredients substantially throughout said conching step, said modulating step being substantially ongoing, the conching agitator speed being a function of the ingredients resistance monitored during said monitoring step such that the conching agitator speed increases as said ingredients resistance decreases and such that said conching agitator speed decreases as said ingredients resistance increases, whereby said predetermined power input is maintained substantially constant substantially throughout the conching step and the total time of the conching step is decreased; and
- removing the flowable chocolate product from the conching apparatus.
- 37. The conched chocolate in accordance with claim 36, wherein said decrease of the total time of the conching step includes reducing conching time by ceasing the conching step as soon as a preselected maximum viscosity characteristic is achieved.
- 38. The conched chocolate in accordance with claim 36, wherein said variable speed drive has a power rating between about 2 and about 3 times the power rating of the motor, and wherein during said monitoring step said variable speed drive receives feedback of varying ingredients resistance, and during said modulating step said drive varies rotation speed of the motor in accordance with the varying ingredients resistance.
- 39. The conched chocolate in accordance with claim 36, wherein said moving step includes subjecting the ingredients to an ordered sequence of phases including a dry phase, a tough plastic phase, a soft plastic phase and a liquid phase, wherein the conching agitators rotate in a first direction during the tough plastic phase and rotate in a second direction opposite of said first direction during the soft plastic phase.
- 40. The conched chocolate in accordance with claim 36, wherein said modulating step substantially maintains the predetermined power input at approximately 100% of the rated power of the motor.
- 41. The conched chocolate in accordance with claim 36, wherein the conched chocolate had been standardized within the conching apparatus and prior to removal of the chocolate from the conching apparatus.
