Claims
- 1. A composition comprising a material that is susceptible to degradation and a preserving agent present in an amount effective to inhibit the degradation of said material, said preserving agent comprising one or more reduced malto-oligosaccharide species.
- 2. The composition of claim 1, wherein said material is reactive with a carbohydrate aldehyde substituent or carbohydrate ketone substituent.
- 3. The composition of claim 1, wherein said material is a photochemically reactive material.
- 4. The composition of claim 1, wherein said material is reactive with atmospheric oxygen.
- 5. The composition of claim 1, wherein said material is selected from the group consisting of an oxidant, a reducing agent, a polymerizable material, a catalyst, a coloring agent, a flavoring agent, and a protein.
- 6. The composition of claim 1, wherein said material is selected from the group consisting of a tissue, a cell, an organelle, a bioactive compound, a precursor of a bioactive compound, and mixtures thereof.
- 7. The composition of claim 1, wherein said material is an antioxidant or a precursor thereof.
- 8. The composition of claim 7, wherein said antioxidant is selected from the group consisting of caffeic acid, rosmarinic acid, gallic acid, ferulic acid, coumaric acid, precursors of the foregoing, and mixtures thereof.
- 9. The composition of claim 1, wherein said material is a biological extract.
- 10. The composition of claim 9, wherein said biological extract is selected from the group consisting of a tea extract, a grape seed extract, a soy extract, a corn extract, and mixtures thereof.
- 11. The composition of claim 1, wherein said material is an enzyme.
- 12. The composition of claim 11, wherein said enzyme is selected from the group consisting of a protease, a lipase, a lactase, a xylanase, a cellulase, a phosphatase, a glycosyl tranferase, a nuclease, and mixtures thereof.
- 13. The composition of claim 1, wherein said preserving agent comprises a mixture of a plurality of reduced malto-oligosaccharide species differing at least in DP value.
- 14. The composition of claim 13, wherein at least one of said reduced malto-oligosaccharide species has a DP greater than 5.
- 15. The composition of claim 13, wherein at least one of said reduced malto-oligosaccharide species has a DP greater than about 8.
- 16. The composition of claim 13, wherein at least one of said reduced malto-oligosaccharide species has a DP greater than about 10.
- 17. The composition of claim 13, wherein at least about 80% of said reduced malto-oligosaccharide species have a DP greater than 5.
- 18. The composition of claim 13, wherein at least about 60% of said reduced malto-oligosaccharide species have a DP greater than 8.
- 19. The composition of claim 13, wherein at least about 60% of said reduced malto-oligosaccharide species have a DP greater than 10.
- 20. The composition of claim 13, wherein at least about 80% of said reduced malto-oligosaccharide species have a DP greater than 10.
- 21. The composition of 16, wherein at least about 75% of said reduced malto-oligosaccharide species have a DP greater than 5 and at least about 40% of said reduced malto-oligosaccharide species have a DP greater than 10.
- 22. The composition of claim 1, wherein said composition comprises a solution of said material and said preserving agent.
- 23. The composition of claim 22, wherein said solution includes a solvent in which said material and said preserving agent.
- 24. The composition of claim 1, wherein said composition is a spray dried powder comprising said material and said preserving agent.
- 25. The composition of claim 1, said preserving agent comprising a reduced malto-oligosaccahride species that has been prepared by catalytically reducing a mixture of malto-oligosaccharide species under reaction conditions suitable to substantially preserve the DP profile of said mixture.
- 26. A method of preserving a material that is susceptible to degradation, the method comprising contacting said material with an amount of a preserving agent effective to inhibit the degradation of said material, said preserving agent comprising one or more reduced malto-oligosaccharide species.
- 27. The method of claim 26, wherein said preserving agent comprises a mixture of a plurality of reduced malto-oligosaccharide species differing at least in DP value.
- 28. The method of claim 26, said preserving agent comprising a reduced malto-oligosaccahride species that has been prepared by catalytically reducing a mixture of malto-oligosaccharide species under reaction conditions suitable to substantially preserve the DP profile of said mixture.
- 29. A method according to claim 26, comprising the steps of:
providing a solution containing said material and said preserving agent, and drying said solution to produce a dried composition comprising said material and said preserving agent, said preserving agent being present in said dried composition in an amount effective to inhibit the degradation of said material.
- 30. The method of claim 29, wherein said solution is spray dried.
- 31. The method according to claim 26, comprising the steps of:
providing a solution containing said material, providing one or more reduced malto-oligosaccharide species in powdered form, and depositing said material on said powder to form a powdered mixture, said preserving agent being present in said powdered mixture an amount effective to inhibit the degradation of said material.
- 32. A method of preserving a chemically reactive material that is susceptible to degradation or loss of activity or function, said method comprising preparing a solution comprising a material that is susceptible to degradation and a preserving agent, said preserving agent comprising one or more reduced malto-oligosaccharide species, wherein the concentration of said one or more reduced malto-oligosaccharide species is effective to preserve said material.
- 33. The method of claim 32, wherein said solution comprises a solvent, and said material and said preserving agent are dissolved in said solvent.
- 34. The method according to claim 26, further comprising the step of storing said material after said material has been contacted with said preserving agent.
- 35. The method according to claim 26, the method including the step of drying said material.
