Claims
- 1. In a continuous pressure cooker and cooler having a pressure vessel with an inlet and an outlet pressure lock, and liquid circulating means for directing a heat treatment liquid into said pressure vessel; the improvement which comprises a processing vessel movable through said pressure vessel, a liquid-tight tub included in said processing vessel positioned to receive and be filled with a heat treatment liquid through an elevated inlet means thereon and having an overflow edge before the top of said inlet means over which the liquid flows during processing for collection in a shallow pool in the bottom of the pressure vessel externally of and below the level of said tub, container supporting means disposed within said tub defining a tunnel having an inlet end and an outlet end, means in said tunnel for supporting the containers in spaced parallel rows with all containers being below the liquid level in the tub as defined by said overflow edge, and flow control means associated with said container supporting means for causing relative motion of said processing liquid and said containers in a direction parallel to said rows of containers.
- 2. An apparatus according to claim 1 wherein said flow control means comprises said elevated liquid inlet means being connected to one end of said tunnel in position to receive a predetermined flow of liquid from the liquid circulating means, said liquid inlet means providing a hydrostatic head of predetermined height above said overflow edge for establishing a controlled rate of flow of said liquid through said tunnel past said containers for subsequent overflow from said tub.
- 3. An apparatus according to claim 2 wherein said rows of containers are oriented horizontally, wherein said liquid inlet means is in the form of a tubular open ended housing, and wherein said liquid circulating means is effective to maintain a hydrostatic head within said liquid tubular housing at a substantially predetermined level that is about 2 cm or more above said overflow edge.
- 4. An apparatus according to claim 2 wherein said rows of containers are oriented vertically, and wherein said liquid inlet means is in the form of a liquid spreading tray having a perforated floor, and wherein said circulating means is effective to maintain a hydrostatic head within the tray at a predetermined level that is about 2 centimeters or more above said overflow edge.
- 5. An apparatus according to claim 1 including means for rotating said container supporting means and containers therein in excess of one complete revolution while all containers are completely submerged within the liquid in said tub, rotation of the containers being effective to agitate the contents of the containers during processing.
- 6. An apparatus according to claim 1 including means for oscillating said container supporting means and containers therein while completely submerged within the liquid in said tub to baste the contents of the containers during processing.
- 7. An apparatus according to claim 2 including means for rotating said container supporting means and containers therein in excess of one complete revolution while all containers are completely submerged within the liquid in said tub, rotation of the containers being effective to agitate the contents of the containers during processing.
- 8. An apparatus according to claim 2 including means for oscillating said container supporting means and containers therein while completely submerged within the liquid in said tub to baste the contents of the containers during processing.
- 9. A continuous pressure cooker and cooler comprising: means defining a pressure vessel having an inlet pressure lock, a cooking chamber and an outlet pressure lock; means defining a plurality of processing vessels each including a liquid tight tub having an elevated inlet means and an overflow edge below the top of said inlet means and container supporting means in said tub below the level of said overflow edge; said tub being filled with a heat treatment liquid and said container supporting means having all containers therein completely submerged in the liquid in said tub; means for maintaining said cooking chamber under superatmospheric pressure at all times during processing and for maintaining said inlet lock and said outlet lock under superatmospheric pressure when said locks are closed to the atmosphere; power means for opening and closing said locks and for sequentially moving said container and liquid filled processing vessels into and through said inlet lock, cooking chamber, and outlet lock while maintaining said cooking chamber at superatmospheric pressure; liquid circulating means for controllably directing a heat treatment liquid into the tubs for movement at a controlled rate past the containers and out of the tubs over the overflow edges for collection in a shallow pool in the bottom of said pressure vessel externally of and below said tubs for subsequent recirculation; and temperature controlling means for maintaining the temperature of the liquid entering the tubs when in the inlet lock, cooking chamber, and outlet lock at predetermined preheating, cooking, and precooling temperatures, respectively.
- 10. An apparatus according to claim 9 wherein said container supporting means of each of said processing vessels is adapted to support rows of containers spaced from each other with the heat treatment liquid circulating therepast in a direction parallel to said rows for providing substantially equal heat transfer between the liquid and each container prior to overflow from the tub.
- 11. An apparatus according to claim 10 wherein said container supporting means is held stationary relative to its associated tub during processing for providing a still cook.
- 12. An apparatus according to claim 10 and additionally comprising means for moving said container supporting means relative to its associated tub during processing for providing an agitating cook.
- 13. An apparatus according to claim 12 wherein said moving means rotates said container supporting means within said tube.
- 14. An apparatus according to claim 12 wherein said moving means oscillates said container supporting means within said tub for basting the product within the containers.
- 15. An apparatus according to claim 9 wherein said container supporting means of each of said processing vessels is in the form of a tunnel having an inlet end and an outlet end, means in said tunnel for supporting the containers in rows, liquid inlet means included in said processing vessel and communicating with said inlet end of said tunnel for providing a hydrostatic head of liquid above the overflow edge of said tub causing liquid to flow from said inlet means through said tunnel and over said overflow edge at a controlled rate determined by the hydrostatic head, said liquid when passing through said tunnel moving in a direction parallel to said rows for providing substantially equal heat transfer between the liquid and each container in the tunnel.
- 16. An apparatus according to claim 15 wherein said rows of containers and the direction of flow are oriented horizontally.
- 17. An apparatus according to claim 16 wherein said liquid inlet means is in the form of a tubular open ended housing, and wherein said liquid circulating means is effective to maintain said hydrostatic head within said tubular housing at a predetermined level that is about 2 centimeters or more above said overflow edge.
- 18. An apparatus according to claim 15 wherein said rows and direction of flow are oriented vertically.
- 19. An apparatus according to claim 18 wherein said liquid inlet means is in the form of a water spreading tray having a perforated floor, and wherein said circulating means is effective to maintain said hydrostatic head within said tray at a predetermined level that is about 2 centimeters or more above said overflow edge.
- 20. An apparatus according to claim 15 and additionally comprising means for moving said container supporting means relative to its associated tub during processing for providing an agitating cook.
- 21. An apparatus according to claim 9 and additionally comprising an atmospheric cooler positioned to receive said processing vessels as they are discharged from said outlet lock, means for moving said processing vessels through said atmospheric cooler, and means for circulating a cooling liquid through said processing vessels while in said atmospheric cooler.
- 22. An apparatus according to claim 21 wherein said coolant circulating means is effective to collect cooled liquid from downstream processing vessels and circulate it into and through the next upstream vessels.
- 23. An apparatus according to claim 9 wherein said means defining a pressure vessel includes an intermediate pressure lock between said inlet and outlet locks to provide an elongated pressure cooling chamber between said intermediate lock and said outlet lock, said power means being effective to operate said intermediate lock in timed relationship with said other lock and with the sequential movement of the processing vessels into and through said locks.
- 24. An apparatus according to claim 9 wherein said means defining a pressure vessel includes a baffle intermediate the pressure locks and having an opening therein for permitting the processing vessels to pass therethrough; said baffle being effective to divide said pressure vessel into said pressure cooking chamber, a pressure cooling chamber, and said inlet and outlet locks.
- 25. An apparatus according to claim 9 wherein said pressure vessel includes two sections that are angled relative to each other.
