Claims
- 1. Dehydrated potato products made by the method comprising:
(a) cooking potatoes to a hardness of from about 65 gf to about 500 gf to form cooked potatoes; (b) comminuting the cooked potatoes to form a wet mash; (c) dehydrating the wet mash to form dehydrated potato products.
- 2. The dehydrated potato products of claim 1, wherein from about 0.5% to about 50% native starch is added to the wet mash before the dehydrating step.
- 3. The dehydrated potato products of claim 2, wherein said native starch comprises wheat starch.
- 4. The dehydrated potato products of claim 1, wherein from about 0.1% to about 3% emulsifier is added to the wet mash before the dehydrating step.
- 5. The dehydrated potato products of claim 1, 2, 3, 4, or 5, wherein said dehydrated potato products are selected from the group consisting of flakes, flanules, granules, agglomerates, sheets, pieces, bits, flour, particulates, and mixtures thereof.
- 6. A food product made from the dehydrated potato products of claim 5.
- 7. The food product of claim 6, wherein said food product is selected from the group consisting of mashed potatoes, potato patties, potato pancakes, French fries, potato sticks, and potato snacks.
- 8. The food product of claim 7, wherein said potato snacks are fabricated chips.
