Claims
- 1. A method of enzymatically protein-encapsulating oil particles by complex coacervation comprising:first forming at ambient temperature a complex coacervate of oil particles with two oppositely-charged colloids; cooling said complex coacervate to a gel temperature at a pH of about 5 to deposit a protein shell around each of said oil particles; further cooling said complex coacervate to a cross-linking temperature below said gel temperature at a pH of about 7 to stabilize said protein shell; and adding an enzyme to the water for enzymatically cross-linking said stabilized protein shell at about pH 7 to form stable protein-encapsulated oil particles.
- 2. The method of claim 1 wherein said enzyme is a transglutaminase.
- 3. The method of claim 2 wherein said cross-linking temperature is about 5-10° C.
- 4. The method of claim 1 wherein said protein-encapsulated oil particles range from about 100 microns to about 300 microns.
- 5. The method of claim 1 wherein said protein-encapsulated oil particles are thermostable.
- 6. The method of claim 1 wherein said oil is a flavor oil.
- 7. The method of claim 1 wherein said complex coacervate is formed from an emulsion of two oppositely charged colloids.
