- 1. A fabricated chip having a PCF value of from about 5.2 to about 6.5.
- 2. The fabricated chip of claim 1, having a PCF value of from about 5.5 to about 6.
- 3. A fabricated chip having a Crispiness value of from about 6.5 to about 7.
- 4. The fabricated chip of claim 3, having a Crispiness value of from about 6.3 to about 6.7.
- 5. The fabricated chip of claim 1, 2, 3, or 4 having an initial hardness of from about 740 gf to about 2000 gf.
- 6. A fabricated chip having a thickness of from about 48 to about 62 and an initial hardness of from about 450 gf to about 2000 gf.
- 7. A fabricated chip having from about 5% to about 21% soluble Amylopection.
- 8. The fabricated chip of claim 1, 2, 3, 4, 6, 7, or 8 having a Doneness of from about 4.5 to about 5.6.
- 9. The fabricated chip of claim 8, having a Doneness of from about 4.7 to about 5.2.
- 10. The fabricated chip of claim 1, 2, 3, 4, 6, 7, or 8 having an Aw of from about 0.05 to about 0.35.
- 11. A fabricated chip having a Tg of from about 70° C. to about 140° C. (equilibrated at an Aw of about 0.31).
- 12. The fabricated chip of claim 11, having a Tg of from about 80° C. to about 120° C. (equilibrated at an Aw of about 0.31).
- 13. The fabricated chip of claim 12, having a Tg of from about 90° C. to about 100° C. (equilibrated at an Aw of about 0.31).
- 14. A fabricated chip having an onset of E′ of from about 52° C. to about 100° C.
- 15. The fabricated chip of claim 14, having an onset of E′ of from about 58° C. to about 80° C.
- 16. The fabricated chip of claim 15, having an onset of E′ of from about 60° C. to about 70° C.
- 17. A fabricated chip having a tan delta of from about 125° C. to about 180° C.
- 18. The fabricated chip of claim 17, having a tan delta of from about 135° C. to about 175° C.
- 19. The fabricated chip of claim 18, having a tan delta of from about 150° C. to about 168° C.
- 20. A fabricated chip made from a dough comprising:
(a) from about 35% to about 85% starch-based flour, wherein said starch based flour comprises from about 25% to about 100% potato flakes comprising:
(1) less than about 70% broken cells; and (2) an Amylose to Amylopectin ratio of from about 0.4 to about 4; and (b) from about 15% to about 50% added water; wherein said fabricated chip is cooked by frying in a fat comprising mid-oleic sunflower oil.
- 21. A fabricated chip made from a dough comprising:
(a) from about 35% to about 85% starch-based flour, wherein said starch based flour comprises from about 25% to about 100% potato flakes comprising:
(1) less than about 70% broken cells; and (2) an Amylose to Amylopectin ratio of from about 0.4 to about 4; and (b) from about 15% to about 50% added water; wherein said fabricated chip is cooked by frying in an oil comprising less than about 25% saturated fat and less than about 1% free fatty acids.
