Claims
- 1. As a new composition of matter a soluble coffee material having added thereto a minor, but flavor modifying amount of a compound selected from the group of compounds having the general formula: ##SPC3##
- wherein R is a methyl, ethyl, furfuryl or acetyl group.
- 2. The soluble coffee of claim 1 wherein the added compound is N-methyl-pyrryl-2-methyl methyl sulfide.
- 3. The soluble coffee of claim 1 wherein the added compound is N-methyl-pyrryl-2-methyl ethyl sulfide.
- 4. The soluble coffee of claim 1 wherein the added compound is N-methyl-pyrryl-2-methyl furfuryl sulfide.
- 5. The soluble coffee of claim 1 wherein the added compound is (N-methyl-pyrryl-2) methylthiol acetate.
- 6. A process for the alteration of the natural flavor of soluble coffee material which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from those represented by the formula: ##SPC4##
- wherein R is a methyl, ethyl, furfuryl or acetyl group.
- 7. The process of claim 6 wherein the added compound is N-methyl-pyrryl-2 methyl methyl sulfide.
- 8. The process of claim 6 wherein the added compound is N-methyl-pyrryl-2 methyl furfuryl sulfide.
- 9. The process of claim 6 wherein the added compound is N-methyl-pyrrl-2-methyl ethyl sulfide.
- 10. The process of claim 6 wherein the added compound is (N-methyl-pyrrl-2) methylthiol acetate.
- 11. A composition selected from the group consisting of foodstuffs and beverages to which has been added an effective, flavor improving amount of an aromatic sulfur compound selected from the group of compounds having the general formula: ##SPC5##
- wherein R is a methyl, ethyl, furfuryl or acetyl group.
- 12. The composition of claim 11 wherein the added compound is N-methyl-pyrrl-2 methyl methyl sulfide.
- 13. The composition of claim 11 wherein the added compound is N-methyl-pyrryl-2-methyl ethyl sulfide.
- 14. The composition of claim 11 wherein the added compound is N-methyl-pyrryl-2-methyl furfuryl sulfide.
- 15. The composition of claim 11 wherein the added compound is (N-methyl-pyrryl-2) methylthiol acetate.
- 16. A process for the alteration of the flavor of a composition selected from the group consisting of foodstuffs and beverages which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from those represented by the formula: ##SPC6##
- wherein R is a methyl, ethyl, furfuryl or acetyl group.
- 17. The process of claim 16 wherein the added compound is N-methyl-pyrryl-2 methyl methyl sulfide.
- 18. The process of claim 16 wherein the added compound is N-methyl-pyrryl-2-methyl ethyl sulfide.
- 19. The process of claim 16 wherein the added compound is N-methyl-pyrryl-2-methyl furfuryl sulfide.
- 20. The process of claim 16 wherein the added compound is (N-methyl-pyrryl-2) methylthiol acetate.
