Claims
- 1. As a new composition of matter a soluble coffee material having added thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formulae: ##SPC7##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy, or ethoxy and R2 is methyl or hydrogen; and ##SPC8##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy or ethoxy, R2 is methyl or hydrogen, R3 is methyl or benzyl and n is 0, 1 or 2; and ##SPC9##
- wherein R is methyl or phenyl.
- 2. The soluble coffee of claim 1 wherein the added compound is of the formula: ##SPC10##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy or ethoxy and R2 is methyl or hydrogen.
- 3. The soluble coffee of claim 2 wherein the added compound is 2-methoxy benzenethiol.
- 4. The soluble coffee of claim 2 wherein the added compound is benzenethiol.
- 5. The soluble coffee of claim 2 wherein the added compound is 2-hydroxy-thiophenol.
- 6. The soluble coffee of claim 2 wherein the added compound is 2-methyl-benzenethiol.
- 7. The soluble coffee of claim 2 wherein the added compound is 3-methyl-benzenethiol.
- 8. The soluble coffee of claim 2 wherein the added compound is 4-methyl-benzenethiol.
- 9. The soluble coffee of claim 2 wherein the added compound is 2,4-dimethyl-benzenethiol.
- 10. The soluble coffee of claim 2 wherein the added compound is 3,4-dimethyl-benzenethiol.
- 11. The soluble coffee of claim 2 wherein the added compound is 2-ethyl-benzenethiol.
- 12. The soluble coffee of claim 2 wherein the added compound is 2-ethoxy-benzenethiol.
- 13. The soluble coffee of claim 2 wherein the added compound is 4-methoxy-benzenethiol.
- 14. The soluble coffee of claim 1 wherein the added compound is of the formula: ##SPC11##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy or ethoxy, R2 is methyl or hydrogen, R3 is methyl or benzyl and n is 0, 1 or 2.
- 15. The soluble coffee of claim 14 wherein the added compound is methyl phenyl sulfide.
- 16. The soluble coffee of claim 14 wherein the added compound is dibenzyl sulfide.
- 17. The soluble coffee of claim 1 wherein the added compound is of the formula: ##SPC12##
- wherein R is methyl or phenyl.
- 18. The soluble coffee of claim 17 wherein the added compound is phenyl methyl disulfide.
- 19. The soluble coffee of claim 17 wherein the added compound is diphenyl disulfide.
- 20. A process for the alteration of the natural flavor of soluble coffee material which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from those represented by the formulae: ##SPC13##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy, or ethoxy and R2 is methyl or hydrogen; ##SPC14##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy or ethoxy, R2 is methyl or hydrogen, R3 is methyl or benzyl and n is 0, 1 or 2; and ##SPC15##
- wherein R is methyl or phenyl.
- 21. The process of claim 20 wherein the added compound is of the formula: ##SPC16##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy or ethoxy and R2 is methyl or hydrogen.
- 22. The process of claim 21 wherein the added compound is 2-methoxy benzenethiol.
- 23. The process of claim 21 wherein the added compound is benzenethiol.
- 24. The process of claim 21 wherein the added compound is 2-hydroxy-thiophenol.
- 25. The process of claim 21 wherein the added compound is 2-methyl-benzenethiol.
- 26. The process of claim 21 wherein the added compound is 3-methyl-benzenethiol.
- 27. The process of claim 21 wherein the added compound is 4-methyl-benzenethiol.
- 28. The process of claim 21 wherein the added compound is 2,4-dimethyl-benzenethiol.
- 29. The process of claim 21 wherein the added compound is 3,4-dimethyl-benzenethiol.
- 30. The process of claim 21 wherein the added compound is 2-ethyl-benzenethiol.
- 31. The process of claim 21 wherein the added compound is 2-ethoxy-benzenethiol.
- 32. The process of claim 21 wherein the added compound is 4-methoxy-benzenethiol.
- 33. The process of claim 20 wherein the added compound is of the formula: ##SPC17##
- wherein R1 is hydrogen, hydroxyl methyl, ethyl, methoxy or ethoxy, R2 is methyl or hydrogen, R3 is methyl or benzyl and n is 0, 1 or 2.
- 34. The process of claim 33 wherein the added compound is methyl phenyl sulfide.
- 35. The process of claim 33 wherein the added compound is dibenzyl sulfide.
- 36. The process of claim 20 wherein the added compound is of the formula: ##SPC18##
- wherein R is methyl or phenyl.
- 37. The process of claim 36 wherein the added compound is phenyl methyl disulfide.
- 38. The process of claim 36 wherein the added compound is diphenyl disulfide.
