Claims
- 1. A composition selected from the group consisting of foodstuffs and beverages to which has beed added an effective flavor-improving amount of a compound selected from the group of compounds having the general formula: ##SPC6##
- wherein R is sec-butyl, prop-1-en-1-yl, or 2-methyl-prop-1-en-1-yl.
- 2. The composition of claim 1 wherein the added compound is furfuryl crotonate.
- 3. The composition of claim 1 wherein the added compound is furfuryl alphamethylbutyrate.
- 4. The composition of claim 1 wherein the added compound is furfuryl B,B'-dimethylacrylate.
- 5. As a new composition of matter a soluble coffee material having added thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formula: ##SPC7##
- wherein R is sec-butyl, prop-1-en-1-yl, or 2-methyl-prop-1-en-1-yl.
- 6. The soluble coffee of claim 5 wherein the added compound is furfuryl crotonate.
- 7. The soluble coffee of claim 5 wherein the added compound is furfuryl alphamethylbutyrate.
- 8. The soluble coffee of claim 5 wherein the added compound is furfuryl B,B'-dimethylacrylate.
- 9. A process for the alteration of the flavor of a composition selected from the group consisting of foodstuffs and beverages which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from those represented by the general formula: ##SPC8##
- wherein R is sec-butyl, prop-1-en-1-yl, or 2-methyl-prop-1-en-1-yl.
- 10. The process of claim 9 wherein the added compound is furfuryl crotonate.
- 11. The process of claim 9 wherein the added compound is furfuryl alphamethylbutyrate.
- 12. The process of claim 9 wherein the added compound is furfuryl B,B'-dimethylacrylate.
- 13. A process for the alteration of the natural flavor of soluble coffee material which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formula: ##SPC9##
- wherein R is sec-butyl, prop-1-en-1-yl, or 2-methyl-prop-1-en-1-yl.
- 14. The process of claim 13 wherein the added compound is furfuryl crotonate.
- 15. The process of claim 13 wherein the added compound is furfuryl alphamethylbutyrate.
- 16. The process of claim 13 wherein the added compound is furfuryl, B,B.sup.1 -dimethyllacrylate.
- 17. A composition selected from the group consisting of foodstuffs and beverages to which has been added an effective flavor-improving amount of a compound selected from the group of compounds having the general formulae: ##SPC10##
- wherein R is a lower alkyl group having between two and six carbon atoms; or a butenyl group.
- 18. The composition of claim 17 wherein the added compound is furfuryl propionate.
- 19. The composition of claim 17 wherein the added compound is furfuryl butyrate.
- 20. The composition of claim 17 wherein the added compound is furfuryl isobutyrate.
- 21. The composition of claim 17 wherein the added compound is furfuryl tiglate.
- 22. The composition of claim 17 wherein the added compound is furfuryl valerate.
- 23. As a new composition of matter a soluble coffee material having added thereto a minor, but flavormodifying amount of a compound selected from the group of compounds having the general formulae: ##SPC11##
- wherein R is a lower alkyl group having between two and six carbon atoms, or a butenyl group; and ##SPC12##
- wherein R is a lower alkyl group; and n is 0 or 2.
- 24. The soluble coffee of claim 23 wherein the added compound is furfuryl propionate.
- 25. The soluble coffee of claim 23 wherein the added compound is furfuryl butyrate.
- 26. The soluble coffee of claim 23 wherein the added compound is furfuryl isobutyrate.
- 27. The soluble coffee of claim 23 wherein the added compound is furfuryl tiglate.
- 28. The soluble coffee of claim 23 wherein the added compound is furfuryl valerate.
- 29. The soluble coffee of claim 23 wherein the added compound is ethyl furoate.
- 30. The soluble coffee of claim 23 wherein the added compound is propyl furoate.
- 31. The soluble coffee of claim 23 wherein the added compound is isopropyl furoate.
- 32. The soluble coffee of claim 23 wherein the added compound is butyl furoate.
- 33. The soluble coffee of claim 23 wherein the added compound is isobutyl furoate.
- 34. The soluble coffee of claim 23 wherein the added compound is isoamyl furoate.
- 35. The soluble coffee of claim 23 wherein the added compound is methyl 3-(.alpha.-furyl)-propionate.
- 36. The soluble coffee of claim 23 wherein the added compound is ethyl 3-(.alpha.-furyl)-propionate.
- 37. A process for the alteration of the flavor of a composition selected from the group consisting of foodstuffs and beverages which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from those

- wherein R is a lower alkyl group having between two and six carbon atoms, or a butenyl group and
- 38. The process of claim 37 wherein the added compound is furfuryl propionate.
- 39. The process of claim 37 wherein the added compound is furfuryl butyrate.
- 40. The process of claim 37 wherein the added compound is furfuryl isobutyrate.
- 41. The process of claim 37 wherein the added compound is furfuryl tiglate.
- 42. The process of claim 37 wherein the added compound is furfuryl valerate.
- 43. A process for the alteration of the natural flavor of soluble coffee material which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formulae: ##SPC14##
- wherein R is a lower alkyl group having between two and six carbon atoms, or a butenyl group; and ##SPC15##
- wherein R is a lower alkyl group; and n is 0 or 2.
- 44. The process of claim 43 wherein the added compound is furfuryl propionate.
- 45. The process of claim 43 wherein the added compound is furfuryl butyrate.
- 46. The process of claim 43 wherein the added compound is furfuryl isobutyrate.
- 47. The process of claim 43 wherein the added compound is furfuryl tiglate.
- 48. The process of claim 43 wherein the added compound is furfuryl valerate.
- 49. The process of claim 43 wherein the added compound is ethyl furoate.
- 50. The process of claim 43 wherein the added compound is propyl furoate.
