Claims
- 1. As a new composition of matter, a soluble coffee material having added thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formula: ##STR3## wherein R.sub.1 is hydrogen, methyl, or phenyl and R.sub.2 is hydrogen, methyl or acetyl.
- 2. The soluble coffee of claim 1 wherein the added compound is 2-acetyl-pyridine.
- 3. The soluble coffee of claim 1 wherein the added compound is 6-methyl-2-acetyl-pyridine.
- 4. The soluble coffee of claim 1 wherein the added compound is 3-acetyl-pyridine.
- 5. The soluble coffee of claim 1 wherein the added compound is 4-acetyl-pyridine.
- 6. The soluble coffee of claim 1 wherein the added compound is pyridine-2-aldehyde.
- 7. The soluble coffee of claim 1 wherein the added compound is pyridine-3-aldehyde.
- 8. The soluble coffee of claim 1 wherein the added compound is pyridine-4-aldehyde.
- 9. The soluble coffee of claim 1 wherein the added compound is 6-methyl-pyridine-2-aldehyde.
- 10. The soluble coffee of claim 1 wherein the added compound is 2-benzoyl-pyridine.
- 11. The soluble coffee of claim 1 wherein the added compound is 3-benzoyl-pyridine.
- 12. The soluble coffee of claim 1 wherein the added compound is 4-benzoyl-pyridine.
- 13. The soluble coffee of claim 1 wherein the added compound is 2,6-diacetyl-pyridine.
- 14. A process for the alteration of the natural flavor of soluble coffee material which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formula ##STR4## wherein R.sub.1 is hydrogen, methyl or phenyl and R.sub.2 is hydrogen methyl or acetyl.
- 15. The process of claim 14 wherein the added compound is 2-acetyl-pyridine.
- 16. The process of claim 14 wherein the added compound is 6-methyl-2-acetyl-pyridine.
- 17. The process of claim 14 wherein the added compound is 3-acetyl-pyridine.
- 18. The process of claim 14 wherein the added compound is 4-acetyl-pyridine.
- 19. The process of claim 14 wherein the added compound is pyridine-2-aldehyde.
- 20. The process of claim 14 wherein the added compound is pyridine-3-aldehyde.
- 21. The process of claim 14 wherein the added compound is pyridine-4-aldehyde.
- 22. The process of claim 14 wherein the added compound is 6-methyl-pyridine-2-aldehyde.
- 23. The process of claim 14 wherein the added compound is 2-benzoyl-pyridine.
- 24. The process of claim 14 wherein the added compound is 3-benzoyl-pyridine.
- 25. The process of claim 14 wherein the added compound is 4-benzoyl-pyridine.
- 26. The process of claim 14 wherein the added compound is 2,6-diacetyl-pyridine.
- 27. A composition selected from the group consisting of foodstuffs and beverages to which has been added an effective flavor-improving amount of a compound selected from the group of compounds having the general formula ##STR5## wherein R.sub.1 is hydrogen, methyl or phenyl and R.sub.2 is hydrogen methyl or acetyl.
- 28. The composition of claim 27 wherein the added compound is 2-acetyl-pyridine.
- 29. The composition of claim 27 wherein the added compound is 6-methyl-2-acetyl-pyridine.
- 30. The composition of claim 27 wherein the added compound is 3-acetyl-pyridine.
- 31. The composition of claim 27 wherein the added compound is 4-acetyl-pyridine.
- 32. The composition of claim 27 wherein the added compound is pyridine-2-aldehyde.
- 33. The composition of claim 27 wherein the added compound is pyridine-3-aldehyde.
- 34. The composition of claim 27 wherein the added compound is pyridine-4-aldehyde.
- 35. The composition of claim 27 wherein the added compound is 6-methyl-pyridine-2-aldehyde.
- 36. The composition of claim 27 wherein the added compound is 2-benzoyl-pyridine.
- 37. The composition of claim 27 wherein the added compound is 3-benzoyl-pyridine.
- 38. The composition of claim 27 wherein the added compound is 4-benzoyl-pyridine.
- 39. The composition of claim 27 wherein the added compound is 2,6-diacetyl-pyridine.
- 40. A process for the alteration of the flavor of a composition selected from the group consisting of foodstuffs and beverages which comprises adding thereto a minor, but flavor-modifying amount of a compound selected from the group of compounds having the general formula ##STR6## wherein R.sub.1 is hydrogen, methyl or phenyl and R.sub.2 is hydrogen methyl or acetyl.
- 41. The process of claim 40 wherein the added compound is 2-acetyl-pyridine.
- 42. The process of claim 40 wherein the added compound is 6-methyl-2-acetyl-pyridine.
- 43. The process of claim 40 wherein the added compound is 3-acetyl-pyridine.
- 44. The process of claim 40 wherein the added compound is 4-acetyl-pyridine.
- 45. The process of claim 40 wherein the added compound is pyridine-2-aldehyde.
- 46. The process of claim 40 wherein the added compound is pyridine-3-aldehyde.
- 47. The process of claim 40 wherein the added compound is pyridine-4-aldehyde.
- 48. The process of claim 40 wherein the added compound is 6-methyl-pyridine-2-aldehyde.
- 49. The process of claim 40 wherein the added compound is 2-benzoyl-pyridine.
- 50. The process of claim 40 wherein the added compound is 3-benzoyl-pyridine.
- 51. The process of claim 40 wherein the added compound is 4-benzoyl-pyridine.
- 52. The process of claim 40 wherein the added compound is 2,6-diacetyl-pyridine.
- 53. As a new composition of matter a soluble coffee material having added thereto a minor, but flavor-modifying amount of 4-(2-pyridyl)-butan-2-one.
- 54. A process for the alteration of the natural flavor of soluble coffee material which comprises adding thereto a minor, but flavor-modifying amount of 4-(2-pyridyl)-butan-2-one.
- 55. A composition selected from the group consisting of foodstuffs and beverages to which has been added an effective flavor-improving amount of 4-(2-pyridyl)-butan-2-one.
- 56. A process for the alteration of the flavor of a composition selected from the group consisting of foodstuffs and beverages which comprises adding thereto a minor, but flavor-modifying amount of 4-(2-pyridyl)-butan-2-one.
