Claims
- 1. A process for augmenting or enhancing the aroma or taste of a foodstuff comprising adding to said foodstuff from about 0.01 parts per million up to about 100 parts per million based on the total weight of said foodstuff of one or more substantially pure, synthetically produced 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-(2H)furanone having the structure: wherein R.sub.1 ', R.sub.2 ', R.sub.3 ' and R.sub.4 ' are the
- 2. The process of claim 1 wherein said 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-(2H)furanone is a compound wherein R.sub.1 ', R.sub.2 ', R.sub.3 ' and R.sub.4 ' are each hydrogen and is a "cis" isomer having the structure: ##STR53##
- 3. The process of claim 1 wherein said 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-(2H)furanone is a compound such that R.sub.1 ', R.sub.2 ', R.sub.3 ' and R.sub.4 ' are each hydrogen and is a "trans" isomer having the structure: ##STR54##
- 4. A flavor modifying composition for augmenting or enhancing the flavor or aroma of a foodstuff consisting of (i) from about 0.05% up to about 20% by weight based on the total weight of said composition of one or more substantially pure, synthetically produced 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-[2H]furanones having the structure: ##STR55## wherein R.sub.1 ', R.sub.2 ', R.sub.3 ' and R.sub.4 ' are the same or different and each represents hydrogen or methyl, and (ii) the remainder of said composition being a flavor adjuvant which is a mixture of:
- Diacetyl,
- Benzaldehyde,
- Furfural,
- Furfuryl Propionate,
- Trimethyl Pyrazine,
- 2. 6-Dimethoxyphenol,
- Pyruvic Acid,
- Furfuryl Mercaptan, and
- Furfuryl Acetate.
- 5. The composition of claim 4 wherein in said 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-[2H]furanone, R.sub.1 ', R.sub.2 ', R.sub.3 ', and R.sub.4 ' are each hydrogen and said furanone is a "cis" isomer having the structure: ##STR56##
- 6. The composition of claim 4 wherein in said 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-[2H]furanone, R.sub.1 ', R.sub.2 ', R.sub.3 ' and R.sub.4 ', are each hydrogen and said furanone is a "trans" isomer having the structure: ##STR57##
