Claims
- 1. A process for the preparation of a particulate flowable encapsulated flavoring or fragrance material comprising heating a high melting point encapsulating or enrobing material and least one emulsifier to form a melt,
- mixing in said melt a flavor composition or fragrance composition, to obtain a homogeneous mixture in the form of an emulsion,
- atomizing said emulsion by spraying said emulsion into a chiller zone to form atomized droplets, chilling said droplets by concurrently spraying a stream of a first compressed gas towards the atomized droplets which stream is directed in a substantially vertically downward direction extending inwardly and downwardly from an upper section of said zone towards a central axis of said zone forming an angle, .crclbar., of 45.degree. C. between said downward and said inward direction, directing a stream of a second compressed gas in a vertical counter current flow in said zone to thereby fluidize said droplets and promoting turbulence to increase heat, mass and momentum transfer rates to produce discrete particles of solid encapsulated agents.
- 2. The process according to claim 1 wherein said stream of a first compressed gas comprises nitrogen which is sprayed from a toroidal manifold zone in a flow vertically downwardly in said chiller zone and in a flow towards the center of said chiller zone, said atomized droplets being sprayed in a radially downward direction in said chiller zone.
- 3. An encapsulated flavoring agent produced by the process of claim 1.
- 4. An encapsulated fragrance agent produced by the process of claim 1.
