Claims
- 1. A method of producing a high beta-glucan viscosity hulled waxy barley pearl with a beta-glucan viscosity greater than 15 cps, the method comprises the following steps;
selecting a hulled waxy barley grain with a beta-glucan content exceeding 6% and a beta-glucan viscosity exceeding 10 cps; pearling away 10-30% of the outer layer of the barley grain resulting in a waxy barley pearl with beta-glucan viscosity exceeding 15 cps.
- 2. The high beta-glucan viscosity hulled waxy barley pearl with a beta-glucan viscosity greater than 15 cps, produced by the method of claim 1.
