Claims
- 1. The process for retaining moisture in uncooked animal muscle tissue during cooking of the animal muscle tissue which comprises:
(a) adding to said uncooked animal muscle tissue a protein mixture selected from the group consisting of a dry protein mixture of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue, an aqueous acidic protein solution of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue and mixtures thereof by an adding method selected from the group consisting of applying said protein mixture to at least one surface of said uncooked animal muscle tissue, mixing said protein mixture with said uncooked animal muscle tissue, injecting said protein mixture into said uncooked animal muscle tissue and a combination of at least two of said adding methods and (b) cooking said uncooked animal muscle tissue and protein mixture from step (a).
- 2. The process of claim 1 wherein the protein mixture of myofibrillar proteins and sarcoplasmic proteins is applied to at least one surface of said uncooked animal muscle tissue
- 3. The process of claim 1 wherein the protein mixture of myofibrillar proteins and sarcoplasmic proteins is applied to all surfaces of said uncooked animal muscle tissue
- 4. The process of claim 1 wherein the protein mixture of myofibrillar proteins and sarcoplasmic proteins is mixed with said uncooked animal muscle tissue.
- 5. The process of claim 1 wherein the protein mixture of myofibrillar proteins and sarcoplasmic proteins is injected into said uncooked animal muscle tissue.
- 6. The process of claim 1 wherein said protein mixture is a dry protein mixture of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue.
- 7. The process of claim 1 wherein said protein mixture is an aqueous acidic protein solution of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue.
- 8. The process of any one of claims 1, 2, 3, 4 or 5 wherein said uncooked animal muscle tissue is fish.
- 9. The process of any one of claims 1, 2, 3, 4 or 5 wherein said uncooked animal muscle tissue is shell fish.
- 10. The process of claim 9 wherein said shellfish is shrimp.
- 11. The process of claims 1, 2, 3, 4 or 5 wherein said uncooked animal muscle tissue is poultry.
- 12. The process of claim 11 wherein said uncooked animal muscle tissue is selected from the group consisting of turkey, duck, goose, game bird and chicken.
- 13. The process of any one of claims 1, 2, 3, 4 or 5 wherein said uncooked animal muscle tissue is meat.
- 14. The process of any one of claim 13 wherein said uncooked animal muscle tissue is selected from the group consisting of ham, beef, lamb, pork, veal, buffalo and venison.
- 15. The process of any one of claims 1, 2, 3, 4 or 5 wherein said protein mixture is derived from fish muscle tissue.
- 16. The process of any one of claims 1, 2, 3, 4 or 5 wherein said protein mixture is derived from poultry muscle tissue.
- 17. The process of any one of claims 1, 2, 3, 4 or 5 wherein said protein mixture is derived from meat muscle tissue.
- 18. The process of claim 15 wherein said protein mixture is meat muscle tissue selected from the group consisting of beef, lamb, pork and mixtures thereof.
- 19. The process of any one of claims 1, 2, 3, 4 or 5 wherein said protein mixture is substantially free of animal membrane lipids.
- 20. The process of claims 8 wherein said protein mixture is substantially free of animal membrane lipids.
- 21. The process of claims 9 wherein said protein mixture is substantially free of animal membrane lipids.
- 22. The process of claims 10 wherein said protein mixture is substantially free of animal membrane lipids.
- 23. The process of claims 11 wherein said protein mixture is substantially free of animal membrane lipids.
- 24. The process of claims 12 wherein said protein mixture is substantially free of animal membrane lipids.
- 25. The process of claims 13 wherein said protein mixture is substantially free of animal membrane lipids.
- 26. The process of claims 14 wherein said protein mixture is substantially free of animal membrane lipids.
- 27. The process of claims 15 wherein said protein mixture is substantially free of animal membrane lipids.
- 28. The process of claims 16 wherein said protein mixture is substantially free of animal membrane lipids.
- 29. The process of any one of claims 1 or 4 wherein said animal muscle tissue is included in a sausage composition.
- 30. The process of any one of claims 1 or 4 wherein said animal muscle tissue is included in a hot dog composition.
- 31. An uncooked animal muscle tissue composition which retains moisture during cooking of the animal muscle tissue which comprises:
at least one surface of said uncooked animal muscle tissue coated with a protein mixture selected from the group consisting of a dry protein mixture of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue, an aqueous acidic protein solution of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue and mixtures thereof.
- 32. The composition of claim 31 wherein the protein mixture of myofibrillar proteins and sarcoplasmic proteins is applied to all surfaces of the uncooked animal muscle tissue.
- 33. An uncooked animal muscle tissue composition which retains moisture during cooking of the animal muscle tissue which comprises:
a mixture of a particulate form of said animal muscle tissue mixed with a protein mixture selected from the group consisting of a dry protein mixture of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue, an aqueous acidic protein solution of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue and mixtures thereof.
- 34. An uncooked animal muscle tissue composition which retains moisture during cooking of the animal muscle tissue which comprises:
a protein mixture selected from the group consisting of a dry protein mixture of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue, an aqueous acidic protein solution of myofibrillar proteins and sarcoplasmic proteins derived from animal muscle tissue and mixtures thereof injected into said uncooked animal muscle tissue.
- 35. The composition of any one of claims 31, 32, 33 or 34 wherein said uncooked animal muscle tissue is fish.
- 36. The composition of any one of claims 31, 32, 33 or 34 wherein said uncooked animal muscle tissue is shell fish.
- 37. The composition of claim 36 wherein said uncooked shell fish is shrimp.
- 38. The composition of any one of claims 31, 32, 33 or 34 wherein said uncooked animal muscle tissue is meat.
- 39. The composition of any one of claims 31, 32, 33 or 34 wherein said uncooked animal muscle tissue is poultry.
- 40. The composition of claim 39 wherein said uncooked animal muscle tissue is selected from the group consisting of duck, turkey, goose, game bird and chicken.
- 41. The composition of any one of claim 40 wherein said uncooked animal muscle tissue is selected from the group consisting of ham, beef, lamb, pork, veal, buffalo and venison.
- 42. The composition of any one of claims 31, 32, 33 or 34 wherein said protein mixture is derived from fish muscle tissue.
- 43. The composition of any one of claims 31, 32, 33 or 34 wherein said protein mixture is derived from poultry muscle tissue.
- 44. The composition of any one of claims 31, 32, 33 or 34 wherein said protein mixture is derived from animal muscle tissue selected from the group consisting of ham, beef, lamb, pork, veal, buffalo and venison.
- 45. The composition of any one of claims 31, 32, 33 or 34 wherein said protein mixture is substantially free of animal membrane lipids.
- 46. The composition of claims 35 wherein said protein mixture is substantially free of animal membrane lipids.
- 47. The composition of claims 36 wherein said protein mixture is substantially free of animal membrane lipids.
- 48. The composition of claims 37 wherein said protein mixture is substantially free of animal membrane lipids.
- 49. The composition of claims 38 wherein said protein mixture is substantially free of animal membrane lipids.
- 50. The composition of claims 39 wherein said protein mixture is substantially free of animal membrane lipids.
- 51. The composition of claims 40 wherein said protein mixture is substantially free of animal membrane lipids.
- 52. The composition of claims 41 wherein said protein mixture is substantially free of animal membrane lipids.
- 53. The composition of claims 42 wherein said protein mixture is substantially free of animal membrane lipids.
- 54. The composition of claims 43 wherein said protein mixture is substantially free of animal membrane lipids.
