Claims
- 1. An apparatus for forming a casingless sausage comprising:
- means for stuffing and shaping flowable batter material;
- treating means associated with said stuffing and shaping means, said treating means being for contacting the flowable batter material with a treatment fluid and for thus forming a proteinaceous skin of batter material from the batter material of the stuffing and shaping means;
- ejecting means for removing a blank from the stuffing and shaping means, the blank having a shape determined by said stuffing and shaping means, the blank further having an external surface including the proteinaceous skin and a core portion including batter material which has not been formed into the proteinaceous skin; and
- conveyor means for receiving and conveying the blank, said conveyor means including end forming means for engaging batter material at at least one end of the blank and for shaping the end batter material into a generally rounded configuration by relative rotational movement between the blank and the end forming means to thereby form a shaped product.
- 2. The apparatus according to claim 1, wherein said end forming means includes a rotatable roller having an end flange with a curved flared surface that rotatably engages batter material at the at least one end of the blank.
- 3. The apparatus according to claim 1, wherein said end forming means includes treating means for forming a proteinaceous skin from the end batter material.
- 4. The apparatus according to claim 3, wherein the treating means of the end forming means contacts said end of the blank with a treatment fluid to form the end proteinaceous skin.
- 5. The apparatus according to claim 1, further including squeeze assembly which is positioned generally opposite to said conveyor means such that the blank engages both the conveyor means and the squeeze assembly.
- 6. The apparatus according to claim 5, wherein the squeeze assembly and the conveyor means are spaced apart by a distance approximating the height of the blank, and the distance tapers gradually downwardly in the downstream direction of the conveyor means, whereby the blank is subjected to squeezing forces when it moves between the squeeze assembly and the conveyor means.
- 7. The apparatus according to claim 5, wherein said end forming means includes a rotatable roller having an end flange with a curved flared surface that rotatably engages batter material at the at least one end of the blank, and the squeeze assembly and the conveyor means cooperate to squeeze batter material from the blank and into engagement with said end flange of the end forming means.
- 8. The apparatus according to claim 7, wherein said end forming means includes treating means for forming a proteinaceous skin from the end batter material.
- 9. The apparatus according to claim 1, wherein said end forming means includes a rotatable roller having an end flange with a generally concave surface that engages the batter material at the at least one end of the blank, and wherein said concave surface imparts a treatment fluid to the batter and forms a proteinaceous skin from the end batter material.
- 10. The apparatus according to claim 9, further including a squeeze assembly which is positioned generally opposite to said conveyor means such that the blank engages both the conveyor means and the squeeze assembly, and the squeeze assembly and the conveyor means cooperate to squeeze batter material from the blank and into engagement with said end flange of the end forming means.
- 11. The apparatus according to claim 1, wherein said conveyor means includes a plurality of rollers, and wherein the blank is supported by at least a pair of said rollers.
- 12. The apparatus according to claim 11, wherein said rollers rotate the blank.
- 13. The apparatus according to claim 1, wherein said means for stuffing and shaping flowable batter provides a continuous flow of batter, and a knife assembly is provided for severing the continuous flow of batter into the blanks, said knife assembly being downstream of said treating means.
- 14. The apparatus according to claim 1, further including an overhead flat belt conveyor positioned generally above said conveyor means at a distance whereby the blank is subjected to a moderate squeezing force when moving between the overhead flat belt conveyor and said conveyor means.
- 15. The apparatus according to claim 1, wherein said treating means includes an orifice within the stuffing and shaping means. and the treatment fluid flows through said orifice and onto the external surface of batter material which flows through the stuffing and shaping means.
- 16. The apparatus according to claim 15, wherein said stuffing and shaping means includes a tubular member through which the batter material flows, and wherein said orifice is a circular slot through the tubular member.
- 17. The apparatus according to claim 15, wherein said treating means is for injecting a pressurized food grade acid solution as the treatment fluid.
- 18. The apparatus according to claim 15, wherein said treating means is associated with heating means and pressurization means for injecting a heated pressurized food grade acid solution as the treatment fluid.
- 19. The apparatus according to claim 15, wherein said treating means includes another orifice, said another orifice being downstream of said orifice through which treatment fluid flows, and a nnsing fluid flows through said another orifice and onto the external surface of batter material which had been treated with the treatmcnt fluid.
- 20. The apparatus according to claim 1, wherein said conveyor means continues into a means for cooking the shaped product.
- 21. The apparatus according to claim 1, further including packaging means for inserting the shaped product into a package and means are provided downstream of said packaging means for cooking the shaped product while it is within the package.
- 22. An apparatus for forming a casingless sausage, comprising:
- means for stuffing and shaping flowable batter material, said stuffing and shaping means having a generally tubular interior surface;
- treating means associated with said stuffing and shaping means, said treating means being for contacting the flowable batter material with a treatment fluid and for thus forming a generally cylindrical proteinaceous skin or batter material from the batter material of the stuffing and shaping means, said treating means including a generally circular orifice through which the treatment fluid flows;
- ejecting means for removing a generally cylindrical blank from the stuffing and shaping means, the blank having an external surface including the proteinaceous skin and a generally cylindrical core portion including batter material which has not been formed into the proteinaceous skin; and
- conveyor means for receiving and conveying the blank, said conveyor means including end forming means for rotatably engaging batter material at at least one end of the blank and for shaping the end batter material into a generally domed configuration by relative rotational movement between the blank and the end forming means to thereby form a product having a sausage-like shape.
- 23. The apparatus according to claim 22, wherein said end forming means includes a rotatable roller having an end flange with a generally concave curved flared surface that rotatably engages batter material at the at least one end of the blank. and said end forming means includes treating means for forming a proteinaceous skin having said generally domed configuration by contacting said end of the blank with a treatment fluid.
- 24. The apparatus according to claim 23, further including a squeeze assembly which is positioned generally opposite to said conveyor means such that the blank engages both the conveyor means and the squeeze assembly, and the squeeze assembly and the conveyor means cooperate to squeeze batter material from the blank and into engagement with said end flange of the end forming means.
- 25. The apparatus according to claim 22, further including an overhead flat belt conveyor positioned generally above said conveyor means at a distance whereby the blank is subjected to a moderate squeezing force when moving between the overhead flat belt conveyor and said conveyor means.
- 26. The apparatus according to claim 22, further including packaging means for inserting the sausage-like shaped product into a package and means are provided downstream, of said packaging means for cooking the shaped product while it is within the package. .Iadd.
- 27. An apparatus for forming a casingless sausage comprising:
- means for stuffing and shaping flowable batter material;
- treating means associated with said stuffing and shaping means, said treating means being for contacting the flowable batter material with a treatment fluid and for thus forming a proteinaceous skin of batter material from the batter material of the stuffing and shaping means;
- ejecting means for removing a blank from the stuffing and shaping means, the blank having a shape determined by said stuffing and shaping means, the blank further having an external surface including the proteinaceous skin and a core portion including batter material which has not been formed into the proteinaceous skin; and
- conveyor means for receiving and conveying the blank, said conveyor means including an end forming assembly for engaging batter material at at least one end of the blank and for shaping the end batter material into a generally rounded configuration to thereby form a shaped product having an end portion with a generally rounded configuration..Iaddend..Iadd.28. The apparatus according to claim 27, wherein said end forming assembly includes treating means for forming a proteinaceous skin from the end batter material..Iaddend..Iadd.29. The apparatus according claim 28, wherein the treating means of the end forming assembly contacts said end of the blank with a treatment fluid to form the end proteinaceous skin..Iaddend..Iadd.30. The apparatus according to claim 27, further including a squeeze assembly which is positioned generally opposite to said conveyor means such that the blank engages both the conveyor means and the squeeze assembly..Iaddend..Iadd.31. The apparatus according to claim 30, wherein the squeeze assembly and the conveyor means are spaced apart by a distance approximating the height of the blank, and the distance tapers gradually downwardly in the downstream direction of the conveyor means, whereby the blank is subjected to squeezing forces when it moves between the squeeze assembly and the conveyor means..Iaddend..Iadd.32. The apparatus according to claim 27, wherein said end forming assembly includes a generally concave surface that engages the batter material at the at least one end of the blank, and wherein said concave surface imparts a treatment fluid to the batter and forms a proteinaceous skin from the end batter material..Iaddend..Iadd.33. The apparatus according to claim 32, further including a squeeze assembly which is posiitoned generally opposite to said conveyor means such that the blank engages both the conveyor means and the squeeze assembly, and the squeeze assembly and the conveyor means cooperate to squeeze batter material from the blank and into engagement with said end forming assembly..Iaddend..Iadd.34. The apparatus according to claim 27, wherein said conveyor means includes a plurality of rollers, and wherein the blank is supported by at least a pair of said rollers, and said rollers rotate the blank..Iaddend..Iadd.35. The apparatus according to claim 27, wherein said means for stuffing and shaping flowable batter provides a continuous flow of batter, and a knife assembly is provided for severing the continuous flow of batter into the blanks, said knife assembly being downstream of said treating means..Iaddend..Iadd.36. The apparatus according to claim 27, wherein said treating means includes an orifice within the stuffing and shaping means, and the treatment fluid flows through said orifice and onto the external surface of batter material which flows through the stuffing and shaping means..Iaddend..Iadd.37. The apparatus according to claim 26, wherein said stuffing and shaping means includes a tubular member through which the batter material flows, and wherein said orifice is a slot through the tubular member..Iaddend..Iadd.38. The apparatus according to claim 36, wherein said treating means is associated with heating means and pressurization means for injecting a heated pressurized food grade acid solution as the

The apparatus according to claim 36, wherein said treating means includes another orifice, said another orifice being downstream of said orifice through which treatment fluid flows, and a rinsing fluid flows through said another orifice and onto the external surface of batter material which had been treated with the treatment fluid..Iaddend..Iadd.40. The apparatus according to claim 27, wherein said conveyor means continues into a means for cooking the shaped product..Iaddend..Iadd.41. The apparatus according to claim 27, further including packaging means for inserting the shaped product into a package and means are provided downstream of said packaging means for cooking the shaped product while it is within the package..Iaddend..Iadd.42. An apparatus for forming a casingless sausage comprising:
- means for stuffing and shaping flowable batter material;
- treating means associated with said stuffing and shaping means, said treating means being for contacting the flowable batter material with a treatment fluid and for thus forming a proteinaceous skin of batter material from the batter material of the stuffing and shaping means;
- ejecting means for removing a blank from the stuffing and shaping means, the blank having a shape determined by said stuffing and shaping means, the blank further having an external surface including the proteinaceous skin and core portion including batter material which has not been formed into the proteinaceous skin; and
- a conveyor assembly downstream of said stuffing and shaping means, said conveyor assembly receiving and conveying the blank, an end forming assembly downstream of said ejecting means, said end forming assembly engages at least one end of the blank and shapes the end batter material thereof into a generally rounded configuration to thereby form a shaped product..Iaddend..Iadd.43. The apparatus according to claim 42, wherein said end forming assembly includes treating means for forming a proteinaceous skin from the end batter material..Iaddend..Iadd.44. The apparatus according claim 43, wherein the treating means of the end forming assembly contacts said end of the blank with a treatment fluid to form the end proteinaceous skin..Iaddend..Iadd.45. The apparatus according to claim 42, further including a squeeze assembly which is positioned generally opposite to said conveyor assembly such that the blank engages both the conveyor assembly and the squeeze assembly..Iaddend..Iadd.46. The apparatus according to claim 45, wherein the squeeze assembly and the conveyor assembly are spaced apart by a distance approximating the height of the blank, and the distance tapers gradually downwardly in the downstream direction of the conveyor assembly, whereby the blank is subjected to squeezing forces when it moves between the squeeze assembly and the conveyor assembly..Iaddend..Iadd.47.
