Claims
- 1. An aseptic, storable fruit juice mixture comprised of a deionized or ultrafiltration juice selected from apple, grape or pear juice blended with a minor amount of a red, orange or yellow colored juice,
- said red, orange or yellow colored juice being blended therein as a concentrate, puree or a mixture and the concentration of said juice mixture adjusted with water to give a brix of 23 to 26.
- 2. A two part type frozen fruit juice mixture comprising a blend of at least two fruit juice mixes to give layers of each of the mixes, one of said fruit mixes having a brix value different from the other one each of the fruit juice mixes having a brix value greater than 10 to 35 and containing about 0.05% to about 1.5% of a stabilizer and a vegetable protein.
- 3. A two part type frozen hard pack comprising a blend of at least two fruit juice mixes to give layers of each of the mixes with each of said layers of said mixes having a different taste, said difference in taste being effected by control of the brix of each mix or controlling the amount of air incorporated therein, each of the fruit juice mixes having a brix value greater than 10 to 35 and containing about 0.05% to about 1.5% of a stabilizer and a vegetable protein.
- 4. A frozen fruit juice confection containing pieces of fruit comprising a fruit juice mixture composed of
- at least one type of fruit juice;
- from about 0.05 percent to about 1.5 percent by weight of at least one stabilizer based upon the total weight of said mixture, said stabilizer being derived from a natural source;
- from about 0.05 percent to about 0.15 percent by weight of a protein based upon the total weight of said mixture and having an incorporation of air from 20 to 150 percent overrun on the frozen mixture;
- an amount of water and including remaining ingredients selected from the group consisting of flavoring spices, flavor enhancers and organic acids and mixtures thereof to give an overall brix value of from about 10 to about 35, and said confection being free of added sugar and corn sweetener additives and said pieces of fruit being impregnated with a juice concentrate, deionized or ultrafiltered fruit juice concentrate having a brix value greater than the brix value of the fruit juice mixture.
- 5. A storable fruit juice mixture comprised of a minor amount of a red, orange or yellow colored juice and another juice selected from the class consisting of apple, grape or pear to form a mixture containing sufficient water to give a brix of 20 to 30.
- 6. A fruit juice mixture useful for making a frozen soft or hard pack product comprising a blend of a concentrated juice selected from apple, grape or pear that has been modified by removing color and flavoring components, a minor amount of a juice having red, orange or yellow color, acid and flavoring to give a mixture of 20 to 30 brix, and having a titratable acidity level within a range of 0.04 to 0.7.
- 7. The fruit juice mixture of claim 6 wherein the juice was modified by treatment with an ion exchange.
- 8. The fruit juice mixture of claim 6 wherein the juice was modified by ultrafiltration.
- 9. A fruit juice mixture of claim 6 containing 0.05 to about 0.50 percent protein, and about 0.05 to about 1.5 percent stabilizer and a brix of about 23 to about 26.
- 10. The fruit juice mixture of claim 9 wherein the juice was modified by treatment by ion exchange.
- 11. The fruit juice mixture of claim 9 wherein the juice was modified by treatment by ultrafiltration.
