Claims
- 1. A method for grinding meat, comprising:
providing meat to a meat grinder; contacting the meat with carbon dioxide; and grinding the meat in the presence of carbon dioxide to provide ground meat.
- 2. The method of claim 1, wherein the carbon dioxide is cooled to a predetermined temperature.
- 3. The method of claim 1, wherein the carbon dioxide is injected at the grinding head of the meat grinder.
- 4. The method of claim 1, further comprising mixing the ground meat to allow the carbon dioxide to dissolve in the ground meat.
- 5. The method of claim 4, wherein carbon dioxide aids in the preservation of the ground meat during storage by later evolving from the meat and maintaining the oxygen content surrounding the meat below a predetermined level.
- 6. The method of claim 1, further comprising placing the ground meat in a package, removing air from the package, substituting a selected gas therefor, and sealing the package from the exterior environment after removing air.
- 7. The method of claim 6, wherein the gas is nitrogen or carbon dioxide.
- 8. The method of claim 6, wherein the oxygen content in the package after removal of the air is below 0.05%.
- 9. The method of claim 6, further comprising placing an agent in the package to maintain the level of oxygen below 0.05%.
- 10. The method of claim 6, wherein the gas is selected to suppress formation of metmyoglobin.
- 11. The method of claim 6, further comprising testing the meat for the presence of bacteria.
- 12. The method of claim 11, wherein the bacteria is E. coli bacteria.
- 13. A method of extending the storage life of meat in packages, comprising:
contacting the meat with a suitable quantity of carbon dioxide; placing the meat in a package; and removing air from the package and substituting a selected gas therefor, wherein the remaining level of oxygen in the package is selected to suppress formation of metmyoglobin to result in an extended storage life of the meat compared to the storage life of meat packaged in air.
- 14. The method of claim 13, wherein the selected gas is carbon dioxide or nitrogen.
- 15. The method of claim 13, further comprising placing an agent in the package to maintain the level of oxygen below 0.05%.
- 16. The method of claim 13, wherein the remaining level of oxygen in the package is selected to suppress oxidizing deoxymyoglobin in meat.
- 17. A method for storing ground meat, comprising:
dissolving a suitable quantity of carbon dioxide in ground meat; packaging the ground meat with carbon dioxide dissolved therein, wherein said quantity is sufficient to allow carbon dioxide to evolve from the meat.
- 18. The method of claim 17, wherein carbon dioxide evolving from said meat aids in the preservation of meat during storage.
