Claims
- 1. The method of manufacturing amylaceous material comprising the steps in the following sequence:
- (a) hydrolyzing a material selected from the group consisting of corn flour, corn meal, corn grits, corn starch, sorghum flour, sorghum meal and sorghum grits at moistures between 5 and 12% by weight of the humidified starting material using between 0.1 and 2% by weight acid;
- (b) adjusting the pH of the acid hydrolyzed amylaceous material to between pH 3 and 6 obtained on a 10% solids water slurry;
- (c) gelatinizing the pH adjusted acid hydrolyzed amylaceous material at moisture levels between 15 and 40% and at temperatures of between 212.degree. and 400.degree. F.;
- (d) removing water from the gelatinized product;
- (e) comminuting the dried amylaceous mass to a flour.
- 2. The method claimed in claim 1 wherein the pH adjustment is accomplished with ammonia.
- 3. The method claimed in claim 1 wherein the gelatinization is accomplished by an extruder.
- 4. The method claimed in claim 1 wherein the gelatinization is accomplished by an expander.
- 5. The method claimed in claim 1 wherein the alkaline viscosity of the acid modified material is less than 20 seconds using a 1.3 g sample before gelatinization.
- 6. A product formed by the process of claim 1 wherein the product has alkaline viscosities of less than 20 seconds at 1.3 g sample and less than 100 seconds using a 5.2 g sample and cold water solubles of at least 50%.
- 7. The method claimed in claim 1 wherein the hydrolysis is carried out with an acid selected from the group consisting of HCl and H.sub.2 SO.sub.4.
- 8. The method claimed in claim 7 wherein the acid modification is carried out at a temperature between 150.degree.-200.degree. F.
