Claims
- 1. An apparatus for manufacturing blocks of cheese from cheese curd particles containing whey comprising:
- an open ended container for holding the cheese curd particles,
- a drain plate enclosing the bottom of said container, said drain plate having a plurality of perforations,
- drain screen means positioned in said container, said drain screen means including two substantially parallel, narrowly spaced-apart sidewalls having a multiplicity of openings,
- spacing means defined by at least one of said sidewalls of said drain screen means comprising a plurality of integrally formed dimples that protrude outwardly and are adapted to engage the opposing sidewall for maintaining said two sidewalls in parallel, spaced-apart relation when said drain screen means is positioned in said container,
- said sidewalls being separable from each other by relative generally outward movement when removed from said container to facilitate assembly and disassembly of said drain screen means,
- said drain screen means being positioned in said container wherein the space between said sidewalls is in communication with at least some of said perforations in said drain plate, said drain screen means being of substantially parallel construction throughout its extent in the container and being of sufficient width and height in relation to the container such that the whey has a relatively short distance to travel to said drain screen means and thus is easily drainable over substantially the entire volume of said cheese curd whereby whey received in said drain screen means is allowed to flow out of said container.
- 2. An apparatus in accordance with claim 1 wherein said plurality of perforations in said drain plate are uniformly distributed in said drain plate.
- 3. An apparatus in accordance with claim 1 wherein said drain plate includes a row of apertures located in the center axis of said drain plate, and wherein said drain screen means is disposed above said row of apertures.
- 4. An apparatus in accordance with claim 1 wherein said dimples protrude outwardly approximately 1/8 inch from at least one of said sidewalls.
- 5. An apparatus in accordance with claim 1 wherein said multiplicity of openings in said sidewalls of said drain screen means comprise vertically extending slits.
- 6. An apparatus in accordance with claim 1 further including at least one pair of spaced lugs extending upwardly from said drain plate, said lugs being oriented to loosely receive therebetween said sidewalls of said drain screen means.
- 7. An apparatus in accordance with claim 1 further including a pair of spaced pins on the bottom edge of each of said sidewalls, with said drain plate having openings receiving said pins, whereby said drain screen means is maintained in communication with said plurality of apertures in said drain plate.
- 8. An apparatus in accordance with claim 1 further including drain screen removal means comprising a lever, a hook portion at one end of the lever and means for mounting said lever for pivotal movement on the wall of said container, said hook portion being engageable with an opening in one of said sidewalls for extracting said drain screen means from said cheese curd particles.
- 9. An apparatus for pressing and draining whey from cheese curd particles for manufacturing large sized blocks of cheese, comprising:
- a pressing container mold having two open ends for holding said curd particles, said container being initially oriented in an upright position with said open ends being at the top and bottom of said container;
- a drain plate enclosing said bottom of said container, said drain plate defining a plurality of apertures;
- removable internal drain screen means removably positioned in said container, said drain screen means including two spaced-apart generally parallel drain screen plates defining a multiplicity of openings, said plates defining a space therebetween extending substantially from said drain plate to said top open end of said container, wherein said space communicates with said apertures in said drain plate;
- means defined by said drain screen plates for maintaining said space between said drain screen plates;
- means for applying pressure to said curd particles;
- means for moving apart said drain screen plates, said moving means being attached to said means for applying pressure, said moving means being insertable between said drain screen plates when said means for applying pressure is lowered into said container whereby pressure is simultaneously exerted on said curd particles in several directions for conducting whey from said curd particles held in said container; and
- means for guiding said moving means, said guiding means emanating from the top edge of each said drain screen plates whereby said moving means is received in said guiding means.
- 10. An apparatus in accordance with claim 9 wherein said apertures are disposed in the center of said drain plate.
- 11. An apparatus in accordance with claim 9 wherein a first plate of said internal drain screen means has both side edges bent normal to said first plate for receiving the other plate.
- 12. An apparatus in accordance with claim 9 wherein said means for maintaining said space comprises dimples in at least one of said drain screen plates, said dimples protruding outwardly from the surface of each drain screen plate and into said space between said drain screen plates.
- 13. An apparatus in accordance with claim 9 further including indexing lugs comprising tabs welded to a surface of said drain plate which faces the interior of said container, wherein said indexing lugs maintain said internal drain screen means generally centrally located in said container.
- 14. An apparatus in accordance with claim 9 wherein said moving means comprises a wall member which is substantially uniform in thickness and has a tapered bottom portion, whereby said wall member when inserted between said drain screen plates contacts said means for maintaining said space thereby increasing the distance between said drain screen plates and thereby exerting pressure on said curd particles normal to said drain screen plates.
- 15. An apparatus in accordance with claim 9 wherein said guiding means comprises two metallic loops projecting vertically upward from the top edge of each of said drain screen plates.
- 16. An apparatus in accordance with claim 9 wherein said means for applying pressure to said curd particles comprises a press plate defining perforations and two slots, and said means for moving apart said drain screen plates is welded to the surface of said press plate while facing the interior of said container whereby, when said press plate is forced down into said curd particles, said slots receive said guiding means thereby stabilizing the separation of said drain screen plates that is caused by said means for moving apart said drain screen plates.
- 17. An apparatus in accordance with claim 16 further including pins comprising metallic rods having a length greater than the width of said slots of said press plate wherein said pins are inserted into said guide means while said guide means is received by said slots, whereby said internal drain screen means will be extracted from said container when said press plate is removed.
- 18. An apparatus in accordance with claim 9 further including centering brackets which engage the top edges of said drain screen plates to maintain said drain screen in a substantially vertical and centered orientation while filling said container with said curd particles.
- 19. An apparatus in accordance with claim 9 further including a base for holding said pressing container mold, said base comprising a platform having sidewalls projecting upwardly to receive said pressing container mold, and wheels attached to said base to facilitate movement of said press container mold.
- 20. An apparatus in accordance with claim 9 further including a base drain pan which receives said container wherein said container rests above the bottom of said pan whereby said plurality of apertures in said drain plate remain unobstructed to allow draining whey to flow into said pan.
- 21. An apparatus in accordance with claim 20 further including a whey excavator hose connected to a vacuum pump wherein said hose communicates with said pan whereby draining whey is pumped away from said pan.
- 22. An apparatus for pressing and draining whey from cheese curd particles for manufacturing large sized blocks of cheese comprising:
- an open ended pressing container mold for holding said cheese curd, said container having two open ends wherein said open ends are defined by sidewalls of said container, said container initially oriented in an upright position having said open ends at the top and bottom of said container;
- a drain plate extending across the bottom end of said container, said drain plate defining a plurality of apertures for whey from said curd particles to flow out of said container, said plurality of apertures including a row of apertures in a central portion of said drain plate;
- internal drain screen means including two spaced-apart generally parallel drain screen plates defining a multiplicity of openings and standing substantially vertically within said container, said drain screen plates comprising a first and second plate wherein said edges of said first plate are bent to form a channel which encloses the side edges of said second plate to allow said second plate to move within said channel, said first and second plates defining a space therebetween which communicates with said row of apertures in said drain plate and which space extends substantially to the top of said container;
- at least one of said drain screen plates defining protruding dimples for initially maintaining said space between said drain screen plates;
- a press frame comprising a press plate defining openings wherein said press plate is adapted to enter said top end of said container and exerts pressure on said curd particles whereby some whey flows out of said openings;
- a spreading spade comprising a wall member projecting vertically downward from said press frame wherein said spreading spade is insertable between said drain screen plates when said press frame is lowered into said container, said spade thereby contacting said dimples and increasing said space between said drain screen plates to cause said drain screen plates to exert pressure on said curd whereby said press frame and said spreading spade work in combination respectively exerting vertical and horizontal pressure on said curd particles at the same time, thereby conducting a large quantity of whey from said container.
- 23. An apparatus in accordance with claim 22 wherein a pair of handles project vertically upwardly from a top edge of each of said drain screen plates to guide said spreading spade into said space.
- 24. An apparatus in accordance with claim 23 wherein said press plate defines slots wherein said slots engage said handles thereby maintaining the alignment of said drain screen plates while inserting said spreading spade.
- 25. An apparatus in accordance with claim 22 wherein said bent side edges of said first plate are normal to said first plate to thereby maintain said space enclosed along the sides of said drain screen when said first and second plates move apart to prevent said curd particles from entering said space.
