Claims
- 1. A carcass of a red meat slaughter animal, wherein one or more vertebrae of the carcass have been separated prior to rigor mortis, and wherein the one or more vertebrae have been separated at a commercial chain speed.
- 2. The carcass of claim 1 wherein one vertebra has been separated.
- 3. The carcass of claim 1 wherein two vertebrae have been separated.
- 4. The carcass of claim 1 wherein the carcass is a bovine carcass.
- 5. The carcass of claim 4 wherein the one or more vertebrae have been separated posterior to the thirteenth rib and anterior to the second lumbar vertebra.
- 6. The carcass of claim 1 wherein the connective tissue, fat, and minor muscles of the carcass adjacent the separation of the one or more vertebrae have not been separated.
- 7. An apparatus for use in meat processing, the apparatus comprising:
a plate; an operating member operably coupled to the plate; and a drive mechanism operably coupled to the operating member for driving the operating member into a carcass to separate a vertebra.
- 8. The apparatus of claim 7 wherein the plate comprises an upper plate and a lower plate.
- 9. The apparatus of claim 7 wherein the plate further comprises a carcass contacting portion and a pin to help maintain contact between the plate and a carcass during use of the apparatus.
- 10. The apparatus of claim 7 wherein the operating member is a piercing wedge.
- 11. The apparatus of claim 10 wherein the drive mechanism is a rotational actuator.
- 12. The apparatus of claim 10 wherein the piercing wedge is a linear piercing wedge.
- 13. The apparatus of claim 11 wherein the drive mechanism is a linear actuator.
- 14. The apparatus of claim 11 wherein the operating member is a circular saw blade.
- 15. The apparatus of claim 14 wherein the circular saw blade is driven pneumatically or hydraulically.
- 16. A method for tenderizing meat, the method comprising:
separating a vertebra of a carcass of a red meat slaughter animal prior to rigor mortis at commercial chain speed, wherein the affecting is conducted using an apparatus comprising:
a plate; an operating member movably coupled to the plate; and a drive mechanism operably coupled to the operating member for driving the operating member through the vertebra.
- 17. A method for treating a carcass of a bovine red meat slaughter animal, the method comprising:
separating a vertebra of the carcass prior to rigor mortis; electrically stimulating the musculature of the carcass; and disinfecting the carcass.
- 18. The method of claim 17 wherein the act of separating is performed prior to the act of electrically stimulating.
- 19. The method of claim 18 wherein the act of electrically stimulating is continued for a sufficient period of time to substantially deplete the glycogen in the musculature of the carcass.
- 20. The method of claim 17 wherein the act of disinfecting is accomplished by steam pasteurization of the carcass.
- 21. The method of claim 18 wherein the act of disinfecting is performed after the act of electrically stimulating the carcass.
- 22. The method of claim 17 wherein the act of disinfecting is performed prior to the act of electrically stimulating the carcass.
- 23. The method of claim 17 wherein the act of separating is performed by sawing through the vertebra of the carcass.
- 24. The method of claim 17 wherein the act of separating is performed at commercial chain speeds.
- 25. The method of claim 17 wherein the act of separating is performed on the thirteenth thoracic vertebra of the carcass.
- 26. The method of claim 25 wherein the act of separating further includes separating the tissue between the feather bones of the thirteenth thoracic vertebra and the twelfth thoracic vertebra.
- 27. The method of claim 17 wherein the act of separating is performed on the twelfth thoracic vertebra of the carcass.
- 28. The method of claim 27 wherein the act of separating further includes separating the thirteenth rib of the carcass.
