Claims
- 1. A method of packaging a selected fluid-containing fresh food item for providing simultaneous curing or marinating of said food item and storage of said food item at normal refrigeration temperatures, said method comprising:
(a) wrapping a fresh food item in a packaging material comprising:
(i) a substrate that is suitable for contact with food; and, (ii) a food treatment layer comprising a predetermined amount of edible adhesive applied to a food contacting surface of said substrate and a curing or marinating agent mixed in, retained and calibrated by said adhesive, wherein said adhesive is capable of dissolving in fluid from said food item at a temperature in the range of −3° C. to +4° C. and the amount of curing or marinating agent retained by said predetermined amount of adhesive is that which is required to substantially cure or marinate said selected food item, said amount of said adhesive having been determined by the amount of curing or marinating agent required to be retained by said adhesive, whereby said food treatment layer is in intimate contact with said food item; and, (b) maintaining said sealed food item at said low temperature at least until said food item is substantially cured or marinated.
- 2. A method of packaging a selected fluid-containing fresh food item for providing simultaneous curing or marinating of said food item and storage of said food item at normal refrigeration temperatures, said method comprising:
(a) wrapping a fresh food item in a packaging material comprising:
(i) a substrate suitable for contact with food; and, (ii) a food treatment layer comprising a predetermined amount of edible adhesive applied to a food contacting surface of said substrate and a curing or marinating agent mixed in, retained and calibrated by said adhesive, wherein said adhesive is capable of dissolving in fluid from said food at a temperature in the range of −3° C. to +4° C. and the amount of curing or marinating agent retained by said predetermined amount of adhesive is that which is required to substantially cure or marinate said selected food item, said amount of said adhesive having been determined by the amount of curing or marinating agent required to be retained by said adhesive, whereby said food treatment layer is in intimate contact with said food item; (b) sealing said wrapped food item in a container that is substantially impermeable to air and microorganisms; and, (c) maintaining said sealed food item at said low temperature at least until said food item is substantially cured or marinated.
- 3. A method according to claim 2 wherein said substrate is a film.
- 4. A method according to claim 1 wherein said substrate is a film which is substantially impermeable to air and microorganisms and said wrapped food item is vacuum sealed.
- 5. A packaging material for wrapping a selected fluid-containing fresh food item for providing simultaneous curing or marinating of said food item and storage of said food item at normal refrigeration temperatures, said packaging material comprising:
(a) a substrate suitable for contact with food; and, (b) a food treatment layer comprising a predetermined amount of edible adhesive applied to a food contacting surface of said substrate and a curing or marinating agent mixed in, retained and calibrated by said adhesive, wherein said adhesive is capable of dissolving in fluid from said food item at a temperature in the range of −3° C. to +4° C. and the amount of curing or marinating agent retained by said predetermined amount of adhesive is that which is required to substantially cure or marinate said selected food item, said amount of said adhesive having been determined by the amount of curing or marinating agent required to be retained by said adhesive.
- 6. A packaging material according to claim 5 wherein said substrate is a film.
- 7. A packaging material according to claim 6 wherein said substrate is substantially impermeable to air and microorganisms.
- 8. A packaging material according to claim 7 wherein said film has a layer of said adhesive applied to a second surface of said film.
