Claims
- 1. A method of filleting fish comprising the steps of making a pair of belly cuts extending longitudinally of the fish body on either side of the anal fin, positioning the fish at an oblique angle of presentation, cleaning the viscera from the belly of the fish, making a pair of backbone cuts through the ribs on either side of the fish backbone to form a pair of individual fish portions, and making a rib cut through the side of each fish portion above the ribs to provide a pair of shank fillets.
- 2. The method of claim 1, further including the step of raising the tail end of the fish to end the belly cuts at the anal fin.
- 3. The method of claim 1, further including the step of guiding the fish through the cleaning, positioning and backbone cut steps by means of the anal fin of the fish.
- 4. The method of claim 1, wherein the backbone cuts are made downwardly through the dorsal side of the fish.
- 5. The method of claim 1, further including the step of guiding the individual portions of the fish after the backbone cuts have been made by means of their ribs.
- 6. The method of claim 1, wherein the oblique angle of presentation is formed by positioning the ribs at the head end of the fish and the anal fin at substantially the same height.
