Claims
- 1. A water dispersible protein product, comprising;
a protein-containing material, wherein at least a portion of the protein therein is water soluble; a surfactant; and a flow agent.
- 2. The protein product of claim 1, wherein said protein-containing material has a Nitrogen Solubility Index (“NSI”) of at least about 80%.
- 3. The protein product of claim 1, wherein the protein of said protein-containing material is soy protein.
- 4. The protein product of claim 1, wherein the protein of said protein-containing material is selected from the group consisting of casein, egg albumin, and whey protein.
- 5. The protein product of claim 1, wherein said surfactant is added to said protein-containing material at an amount of between about 0.1 wt. % and about 3.0 wt. % based upon the weight of said protein-containing material.
- 6. The protein product of claim 1, wherein said flow agent is added to said protein-containing material at an amount of between about 0.1 wt. % and about 2.0 wt. % based upon the weight of said protein-containing material.
- 7. The protein product of claim 1, wherein said surfactant comprises fluidized soy lecithin.
- 8. The product of claim 1, wherein said flow agent comprises precipitated amorphous silica.
- 9. A method of imparting enhanced water dispersibility to a protein-containing material, comprising the steps of:
providing a protein-containing material; adding a surfactant to the protein-containing material; and adding a flow agent to the protein-containing material.
- 10. The method of claim 9, wherein the protein-containing material has a Nitrogen Solubility Index (“NSI”) of at least about 80%.
- 11. The method of claim 9, wherein said adding a surfactant step is carried out prior to said adding a flow agent step.
- 12. The method of claim 9, wherein said adding a flow agent step is carried out prior to said adding a surfactant step.
- 13. The method of claim 9, wherein said adding a surfactant and said adding a flow agent steps are carried out simultaneously.
- 14. The method of claim 9, wherein the protein-containing material is a soy protein product.
- 15. The method of claim 14, wherein the soy protein product is prepared by a method comprising the steps of:
providing a substantially defatted soy protein material; extracting soy protein from the material with water; removing solids from the material to obtain a protein extracted liquid; pasteurizing the protein extracted liquid; and drying the protein extracted liquid.
- 16. The method of claim 9, wherein the protein in the protein-containing material is selected from the group consisting of casein, egg albumin, and whey protein.
- 17. The method of claim 9, wherein said surfactant adding step comprises:
adding between about 0.1 wt. % and about 3.0 wt. % of the surfactant to the protein-containing material, based upon the weight of said protein-containing material.
- 18. The method of claim 9, wherein said flow agent adding step comprises:
adding between about 0.1 wt. % and about 2.0 wt. % of the flow agent to the protein-containing material, based upon the weight of said protein-containing material.
- 19. The method of claim 9, wherein the surfactant comprises fluidized soy lecithin.
- 20. The method of claim 9, wherein said flow agent comprises precipitated amorphous silica.
- 21. The method of claim 9, wherein each of said adding steps comprises a blending-type mixing process.
