Claims
- 1. An edible composition comprising a thickening or suspending amount of Biopolymer PS 87 wherein said Biopolymer PS 87 is a heteropolysaccharide which comprises from 40 to 45% by weight of glucose, from 10 to 20% by weight galactose, from 25 to 30% by weight mannose, from 16 to 13% by weight glucuronic acid and from 0 to 1.5% by weight fucose, a 1% by weight solution of said Biopolymer PS 87 having pseudoplastic properties, a consistency at 20.degree. C. of at least 150 poise and a yield stress value at 20.degree. C. of at least 30 dynes/cm.sup.2.
- 2. A composition according to claim 1 additionally comprising a tetra-alkali metal phosphate, an edible calcium salt and a gum.
- 3. A process for forming a cold milk gel comprising the steps of adding to cold milk a composition according to claim 2 and agitating the milk composition to form a gel.
- 4. A salad dressing comprising a thickening or suspending amount of Biopolymer PS 87 wherein said Biopolymer PS 87 is a heteropolysaccharide which comprises from 40 to 45% by weight of glucose, from 10 to 20% by weight galactose, from 25 to 30% by weight mannose, from 16 to 13% by weight glucuronic acid and from 0 to 1.5% by weight fucose, a 1% by weight solution of said Biopolymer PS 87 having pseudoplastic properties, a consistency at 20.degree. C. of at least 150 poise and a yield stress value at 20.degree. C. of at least 30 dynes/cm.sup.2.
- 5. A salad dressing according to claim 4, further comprising an edible oil, water, an emulsifier, cooked starch, an acidifying ingredient, and salt.
- 6. A method of making a spoonable salad dressing according to claim 4, which comprises the steps of forming a first mixture containing said Biopolymer PS 87 and water; forming a second mixture comprising water together with cooked starch, emulsifier and salt; blending the first mixture and the second mixture to form a combined first-second mixture with edible oil and with acidifying ingredient until a substantially uniform mixture is obtained; and emulsifying the uniform mixture to obtain a spoonable salad dressing.
