Claims
- 1. Apparatus for producing a flavored foodstuff having a variable composition depending upon marketing information input used to control the apparatus using an electronic program controlling means comprising:
- (i) at least one mixing vessel having a means of ingress and a means of egress;
- (ii) means for supplying in controlled and variable amounts according to market requirements to at least one of said mixing vessels, a variably mixed seasoning composition of matter consisting essentially of:
- (a) from about 0.25 up to about 0.80 mole percent on a dry basis of a lactic acid/lactate species mixture having the structures: ##STR21## (b) from 0 up to about 0.09 mole percent on a dry basis of glycollic acid/glycollate ion species mixture having the structure: ##STR22## (c) from 0 up to about 10.0 mole percent on a dry basis of magnesium ion; (d) from about 6 mole percent up to about 50 mole percent on a dry basis of a phosphate/monoacid phosphate/diacid phosphate/phosphoric acid species mixture having the formula:
- [PO.sub.4.sup..tbd. ]+[HPO.sub.4.sup..dbd. ]+[H.sub.2 PO.sub.4.sup.- ]+H.sub.3 PO.sub.4
- taken alone or taken further together with at least one of the species tripolyphosphate, pyrophosphate and/or polymetaphosphate;
- (e) from 0 mole percent up to about 40 mole percent on a dry basis of sodium ion;
- (f) from about 8 mole percent up to about 50 mole percent on a dry basis of potassium ion;
- (g) from about 0.3 mole percent up to about 16 mole percent on a dry basis of chloride ion;
- (h) from 0 mole percent up to 30 mole percent on a dry basis of carbonate/bicarbonate/carbonic acid species mixture having the formula:
- [CO.sub.3.sup..dbd. ]+[HCO.sub.3.sup.-- ]+H.sub.2 CO.sub.3
- (j) from 0 mole percent up to about 2.0 mole percent on a dry basis of monobasic glutamate/dibasic glutamate/glutamic acid species mixture having the formulae: ##STR23## (k) from 0 up to about 0.6 mole percent on a dry basis of calcium ion; with the provisio that the sum total of mole percent on a dry basis of sodium ion, potassium ion, magnesium ion and calcium ion is from about 48 mole percent up to about 60 mole percent; and with the proviso that the sum total of carbonate/bicarbonate/carbonic acid ion species mixture having the formula:
- [CO.sub.3.sup..dbd. ]+[HCO.sub.3.sup.-- ]+H.sub.2 CO.sub.3
- taken together with the sum total mole percent on a dry basis of the phosphate/monobasic phosphate/dibasic phosphate species mixture having the formula:
- [PO.sub.4.sup..tbd. ]+[HPO.sub.4.sup..dbd. ]+[H.sub.2 PO.sub.4.sup.-- ]+H.sub.3 PO.sub.4
- taken alone or taken further together with at least one of the species tripolyphosphate, pyrophosphate and/or polymetaphosphate is from about 50 mole percent the term "mole percent" being based upon the total moles of cations, anions and free organic acid which is substantially non-ionized in the composition;
- (iii) means for supplying to at least one of said mixing vessels at a variably controlled rate according to market requirements and according to the rate of input of said mixed seasoning composition a flavoring formulation;
- (iv) means for supplying to at least one of said mixing vessels in a variably controlled manner according to market requirements and according to the rate of supply of said flavoring formulation and said mixed seasoning composition, a foodstuff base; and
- (v) means for conveying at variable mass flow rates accoridng to market input using electronic program control systems, said mixed seasoning composition, said flavoring formulation and said foodstuff to blending means whereby said mixed seasoning composition, said flavoring formulation and said foodstuff are blended in accordance with market requirements using said electronic program control systems.
- 2. The apparatus of claim 1 wherein the mixed seasoning composition is first blended in a first blending means with the said flavoring formulation prior to blending in a second blending means the resulting product with a foodstuff, the rates of blending in said first blending means and the rate of blending in said second blending means being controlled according to market requirements and being varied in accordance with market requirements using an electronic program control system.
- 3. The apparatus of claim 1 wherein said mixed seasoning, said flavoring formulation and said foodstuff are blended in a single blender at variably controlled rates according to market requirements using an electronic program control system.
