Claims
- 1. A method for producing a modified whey protein preparation, comprising treating a whey protein preparation with a phospholipase in an amount sufficient to improve the foaming overrun and foam stability of the whey protein preparation when the whey protein preparation is whipped.
- 2. The method of claim 1, wherein said whey protein preparation is in the form of a whey protein concentrate.
- 3. The method of claim 1, wherein said whey protein preparation is in the form of a whey protein isolate.
- 4. The method of claim 1, wherein said process comprises dispersing the phospholipase into an aqueous solution comprising the whey protein preparation.
- 5. The method of claim 1, wherein said phospholipase is a purified phospholipase.
- 6. The method of claim 1, wherein said phopholipase is a phospholipase A.
- 7. The method of claim 1, wherein said phospholipase is a phospholipase A1.
- 8. The method of claim 1, wherein said phospholipase is a phospholipase A2.
- 9. The method of claim 1, wherein said phospholipase is a phospholipase B.
- 10. The method of claim 1, wherein said phosphlipase is a combination of phosphlipase A1 and A2.
- 11. The method of claim 1, wherein said phosphlipase is a combination of phosphlipase A and phospholipase B.
- 12. The method of claim 1, wherein said phospholipase is selected from the group consisting of phospholipase A1, phospholipase A2, phospholipase B and any combination thereof.
- 13. A method for producing a modified whey protein preparation, comprising:
a) providing an aqueous solution of a whey protein; b) adding a phospholipase to the aqueous solution to form a reaction mixture; c) incubating the reaction mixture to produce a modified whey protein preparation, wherein said modified whey protein preparation exhibits an improved foaming overrun and foam stability when whipped compared to an untreated whey protein.
- 14. The method of claim 13, further comprising the step of, subsequent to said c), inactivating the phospholipase enzyme.
- 15. The method of claim 13 or 14, further comprising the step of drying the modified whey protein preparation.
- 16. The method of any of claims 13-15, further comprising the step of concentrating the modified whey protein preparation.
- 17. The method of claim 13, wherein said wherein said whey protein is in the form of a whey protein concentrate.
- 18. The method of claim 13, wherein said whey protein is in the form of a whey protein isolate.
- 19. A method for preparing a foam product comprising:
a) providing an aqueous solution of a whey protein preparation, b) adding a phospholipase to the aqueous solution to form a reaction mixture; c) incubating the reaction mixture to produce a modified whey protein preparation; d) whipping the whey protein preparation into a foam.
- 20. A food product comprising a modified whey protein preparation prepared by the method of any one of the preceding claims.
