Claims
- 1. The combination comprising a closed container, a water-containing beverage or food product contained in the container and dried Saccharomyces cerevisiae having about 94-96% dry matter immobilized in a solid material comprising a polymer acceptable for use in direct contact with beverages or food products for human consumption, the solid material containing the immobilized dried
- 2. The combination of claim 1, wherein the solid material has a permeability to water vapor of less than 10 units P.sub.H20 and a transmission rate for oxygen of greater than 0.1 units P.sub.OX.
- 3. A process for removing oxygen from a closed container containing a water-containing beverage or food product comprising the steps of:
- (a) immobilizing dried Saccharomyces cerevisiae having about 94-96% dry matter in a solid material comprising a polymer, the solid material having a permeability to water vapor of less than 100 units P.sub.H20 and a transmission ratio for oxygen of greater than 0.01 units P.sub.OX, and the Saccharomyces cerevisiae contacting only water that penetrates through the solid material;
- (b) coating at least a part of the container inside surface with the solid material containing the immobilized Saccharomyces cerevisiae;
- (c) adding a water-containing beverage or food product to the container such that the beverage or food product does not contact the Saccharomyces cerevisiae, sealing and closing the container; and
- (d) removing oxygen from the closed container by action of the immobilized Saccharomyces cerevisiae being activated by water penetrating the solid material.
- 4. The process of claim 3, wherein the closed container is subjected to a pasteurization treatment when the Saccharomyces cerevisiae is still in substantially dry condition.
- 5. The process of claim 3, wherein the solid material is cast as a film onto the Saccharomyces cerevisiae.
- 6. The process of claim 3, wherein the Saccaromyces cerevisiae is in a film coated on at least a part of a closure surface that is on the inside of the container.
- 7. The process of claim 4, wherein the water-containing product is beer.
