An elongated pitting knife for removing a pit from a drupe, said knife having (i) a length sufficient to eject said pit from said drupe; (ii) a longitudinal bore; and, (iii) at least one generally radial bore in open fluid communication with said longitudinal bore and also with a zone around said knife, said knife having one end adapted to cut through said drupe and contact said pit, and its other end adapted to be mounted in a pitting head means.
- 2. The pitting knife of claim 1 wherein plural radial bores are in open fluid communication with said longitudinal bore which terminates near said one end.
- 3. The pitting knife of claim 2 wherein plural radial bores are 90° spaced apart around the circumference of said one end, and said longitudinal bore is axial.
- 4. The pitting knife of claim 2 wherein said knife is provided with a cross-bore in open communication with said longitudinal bore.
- 5. An assembly of plural knives for pitting drupes comprising,(i) a mounting plate having at least one lateral through-bore; (ii) means for operatively connecting said lateral through-bore with a source of fluid; (iii) plural pitting knives secured within said mounting plate, each of said knives having a length sufficient to eject a pit from a drupe; (iii) an elongated body having a longitudinal bore; (iv) a cross-bore in open communication with said longitudinal bore; and, (v) at least one generally radial bore in open fluid communication with said longitudinal bore and also with a zone around said knife, said knife having one end adapted to cut through said drupe and contact said pit, and its other end adapted to be mounted in a pitting head means.
