Claims
- 1. A method for preparing pre-cut uncooked potatoes for storage at refrigeration temperatures without the addition of preservatives, which consists essentially of the steps of:
- (a) blanching pre-peeled, pre-cut potatoes to seal the outer surface without cooking the inside of the potatoes;
- (b) rapidly cooling said blanched potatoes to an internal temperature of below 45.degree. F.;
- (c) drying said cooled potatoes to remove surface moisture;
- (d) vacuum packaging said dried, uncooked potatoes in an inert gas, said cooled potatoes being maintained at a temperature of 35.degree. to 38.degree. F. during said drying and vacuum packaging; and,
- (e) storing said vacuum packaged potatoes at 34.degree. to 38.degree. F.
- 2. The method according to claim 1 wherein said inert gas is nitrogen.
- 3. The method according to claim 1 wherein said blanched potatoes are rapidly cooled in water having a temperature between 34.degree. F. and 38.degree. F.
- 4. The method according to claim 1 wherein said pre-peeled, pre-cut potatoes are kept at temperatures between 34.degree. F. and 38.degree. F. prior to said blanching step.
