Claims
- 1. A method of mixing dough wherein the energy consumed by the mixer per mass of dough is from about 0.7 to about 50 joules per gram of dough.
- 2. A method of mixing dough wherein the Froude number is greater than about 25.
- 3. The method of claim 2, wherein the Froude number is from about 25 to about 600.
- 4. A method of mixing dough wherein the shear mixing ratio is from about 100 to about 10,000 min−1.
- 5. The method of claim 4, wherein the Froude number is greater than about 25.
