Claims
- 1. A process for preparing fructose from sucrose comprising:i) contacting sucrose with a glucosyltransferase to product fructose, and ii) isolating fructose therefrom, wherein said reacting product further comprises a polyglucan and said process further comprises isolating said polyglucan.
- 2. The process of claim 1, wherein said glucosyltransfease is obtained from an organism selected from the group consisting of S. mutans and higher plants.
- 3. The process of claim 1, wherein said fructose is continuously isolated.
- 4. The process of claim 1, wherein said polyglucan is continuously isolated.
- 5. The process of claim 1, wherein said fructose is isolated by membrane filtration or chromatography.
- 6. The process of claim 1 wherein said polyglucan is isolated by membrane filtration or chromatography.
- 7. A process for preparing commercial quantities fructose and a polyglucan comprising:i) contacting sucrose with a glucosyltransferase to produce a reaction product comprising fructose and a polyglucan; and ii) isolating fructose and said polyglucan.
- 8. The process of claim 1, wherein said polyglucan is water-soluble.
