Claims
- 1. The process of preparing a baked pizza comprising the steps of
- a) spreading on a pizza crust tomato sauce and a cheese composition comprising a mixture of natural mozzarella cheese and a minor amount of starch, wherein the cheese is comminuted and the starch is present as a coating on the cheese particles in an amount within the range of about 0.0005 to 0.01%, based on the weight of the cheese, and
- b) baking said combination of crust, sauce, and starch-coated cheese in an oven until the cheese is fully melted and the crust is uniformly cooked.
- 2. The process of claim 1 wherein the starch gelatinizes at a temperature below about 150.degree. F.
- 3. The process of claim 1 wherein the starch is a modified starch derived from waxy maize.
- 4. The process of claim 1 wherein the cheese particles are frozen both when spread on the pizza crust and when the combination of crust, sauce, and cheese is placed in the oven.
- 5. The process of claim 1 wherein the starch is a modified high amylose starch.
- 6. The process of claim 5 wherein the starch is present in an amount within the range of about 0.001 to 0.01 percent, based on the weight of the cheese.
- 7. The process of claim 1 wherein the cheese has a moisture content in the range of about 52 to 60 weight percent.
- 8. The process of claim 7 wherein step (b) is performed in an oven having a temperature in the range of about 400.degree. to 650.degree. F.
- 9. The process of claim 8 wherein the oven is a deck oven.
- 10. The process of claim 1 wherein, in step (a), the crust is partially pre-baked before all of the mozzarella cheese is spread on it and, in step (b), the oven has a temperature in the range of about 550.degree. to 850.degree. F.
- 11. The process of claim 10 wherein the starch has an amylose content in the range of 40 to 100 weight percent.
- 12. The process of claim 11 wherein the starch is a corn starch.
