Claims
- 1. A pullulanase preparation, wherein said pullulanase exhibits a temperature optimum in the range 110-120.degree. C., determined at pH 5.5 with pullulan as substrate.
- 2. The pullulanase preparation of claim 1, wherein said pullulanase is obtained from a strain of the genus Pyrodictium.
- 3. The pullulanase preparation of claim 2, wherein said Pyrodictium strain is Pyrodictium abyssi.
- 4. The pullulanase preparation of claim 3, wherein said Pyrodictium abyssi strain is Pyrodictium abyssi, DSM 6158.
- 5. The method of producing sweeteners from starch, said method comprising treating starch with the pullulanase of claim 1 under conditions in which sweeteners are produced.
- 6. The method of producing ethanol from starch, said method comprising treating starch with the pullulanase of claim 1 under conditions in which ethanol is produced.
