Claims
- 1. A fried food selected from the group consisting of savory snacks, fried desserts, and fried meats, wherein said fried food is prepared using a composition comprising:
- (a) from about 10 to 90 weight percent of a fatty acid ester of glycerin having an iodine number of at least about 50: and
- (b) from about 10 to 90 weight percent of an esterified alkoxylated polyol;
- wherein the value of ##EQU10## in the composition is at least about 0.05.
- 2. The fried food of claim 1 wherein the fatty acid ester of glycerin is a lipid selected from the group consisting of corn oil, olive oil, safflower oil, cottonseed oil, peanut oil, soybean oil, rapeseed oil, sunflower oil, partially hydrogenated derivatives thereof having an iodine number of at least about 50, and mixtures thereof.
- 3. The fried food of claim 1 wherein the fatty acid ester of glycerin is a triglyceride containing C.sub.12 -C.sub.24 fatty acid ester groups.
- 4. The fried food of claim 1 wherein the value of ##EQU11## in the composition is at least about 0.15.
- 5. The fried food of claim 1 wherein the esterified alkoxylated polyol has the general structure ##STR5## wherein X is an organic radical derived from a polyol, the sum of ##EQU12## is from 2 to 8, w+x+y+z is an average number in the range of 0 to about 0.50, z is an average number in the range of from about 2 to the sum of ##EQU13## on average is in the range of from 0 to about 25, A is an oxyalkylene unit, R.sup.5 is a C.sub.7 -C.sub.23 hydrocarbon group, at least one of R.sup.1, R.sup.2, R.sup.3, or R.sup.4 is a moiety other than hydrogen, and C.sup.2 is a carbon that on average is from 0 to about 15 percent primary.
- 6. The fried food of claim 5 wherein said polyol is selected from the group consisting of glycols, triols, tetrols, sugar alcohols, monosaccharides, and disaccharides.
- 7. The fried food of claim 5 wherein said polyol is glycerin, 2 is an average number in the range of from about 2 to 3, A is an oxypropylene unit, and one only of R.sup.1, R.sup.2, R.sup.3, and R.sup.4 is methyl with the other R groups being hydrogen, and ester group ##STR6## is derived from a C.sub.12 -C.sub.22 fatty acid.
- 8. The fried food of claim 5 wherein the esterified alkoxylated polyol has an iodine number less than about 10.
- 9. A fried food selected from the group consisting of savory snacks, fried desserts, and fried meats, wherein said fried food is prepared using a composition comprising:
- (a) from about 10 to 90 weight percent of a C.sub.12 -C.sub.24 fatty acid triglyceride having an iodine number of at least about 50; and
- (b) from about 10 to 90 weight percent of an esterified propoxylated glycerin;
- wherein the value of ##EQU14## in the composition is at least 0.15.
- 10. The fried food of claim 1 wherein the fried food is a savory snack.
- 11. The fried food of claim 10 wherein the savory snack is selected from the group consisting of potato chips, corn chips, tortilla chips, cheese curls, cheese puffs, and potato sticks.
- 12. The fried food of claim 1 wherein the fried food is a fried dessert.
- 13. The fried food of claim 12 wherein the fried dessert is selected from the group consisting of doughnuts, turnovers, and crullers.
- 14. The fried food of claim 1 wherein the fried food is a fried meat.
- 15. The fried food of claim 14 wherein the fried meat is selected from the group consisting of fish, chicken, turkey, and shrimp.
- 16. The fried food of claim 1 wherein the fried food is a fried potato.
- 17. The fried food of claim 16 wherein the fried potato is a french fry cut potato.
- 18. The fried food of claim 9 wherein the fried food is a savory snack.
- 19. The fried food of claim 18 wherein the savory snack is selected from the group consisting of potato chips, corn chips, tortilla chips, cheese curls, cheese puffs, and potato sticks.
- 20. The fried food of claim 9 wherein the fried food is a fried dessert.
- 21. The fried food of claim 9 wherein the fried food is a fried potato.
- 22. The fried food of claim 9 wherein the fried potato is a french fry cut potato.
- 23. The fried food of claim 9 wherein the fried food is a fried meat.
- 24. The fried food of claim 9 wherein the composition is comprised of from 25 to 75 weight percent of the C.sub.12 -C.sub.24 fatty acid triglyceride and from 25 to 75 weight percent of the esterified propoxylated glycerin.
- 25. The fried food of claim 9 wherein the ester groups in the esterified propoxylated glycerin are derived from C.sub.12 -C.sub.22 fatty acids.
- 26. The fried food of claim 25 wherein the C.sub.12 -C.sub.22 fatty acids are selected from the group consisting of stearic acid, behenic acid, myristic acid, lauric acid, palmitic acid, eicosanoic acid and mixtures thereof.
- 27. The fried food of claim 9 wherein the esterified propoxylated glycerin has an iodine number less than about 10.
