Claims
- 1. A pasteurized, shelf stable, uncooked or partially cooked moist pasta product comprising acidulants and humectants having penetrated a pre-formed internal pasta structure comprising a fixed protein matrix structure having fine capillaries therein and packaged in a sealed container, the pasta having a moisture content from about 15 to about 38%, a pH below about 4.6 and a water activity below about 0.85.
- 2. The pasta of claim 1 wherein the sealed container has a partial vacuum from about 340 mmHg to about 400 mmHg.
- 3. A pasteurized, shelf stable, uncooked or partially cooked moist pasta product comprising acidulants and humectants, having a pre-formed internal pasta structure comprising a fixed protein matrix structure having fine capillaries therein and having a moisture content from about 15 to about 38%, a pH below about 4.6 and a water activity below about 0.85 made by preparing a fresh pasta; subjecting the fresh pasta to steam treatment to set the pasta surface; immersing the steam treated pasta in an acidulant, a humectant or a mixture of an acidulant and a humectant; partially drying the pasta following immersing; sealing the partially dried pasta in a container and pasteurizing the pasta in the container.
