Claims
- 1. A sliceable simulated bacon product consisting of a heat coagulated mass of separate red and white layers, said red layer consisting essentially of the following components in recited percentages by weight:
- ______________________________________Water about 40 to about 65Fat about 10 to about 25Protein isolate about 6 to about 24Albumen up to about 15Proteinaceous filler 0 to about 15Colour and flavouringagents to tasteThickening agent 0 to about 2______________________________________
- and said white layer consisting essentially of the following components in recited percentages by weight:
- ______________________________________Lipid material about 65 to about 80Water about 15 to about 25Proteinaceous emulsifiers, about 2.5 to about 7.0said proteinaceousemulsifiers consisting of:(i) Protein micellar mass about 1 to about 4.0(ii) Egg white, and about 1 to about 2.5(iii) Gelatin about 0.1 to about 1.0Protein fibres about 15 to about 45.______________________________________
- 2. The bacon product of claim 1 wherein the red layer consists essentially of the following components in recited percentages by weight:
- ______________________________________Water about 45 to about 60Fat about 15 to about 25Protein isolate about 9 to about 18Albumen about 1 to about 8Proteinaceous about 1 to about 10fillerColour and flavouring about 5 to about 10agentsThickening agent 0 to about 1______________________________________
- 3. The bacon product of claim 2 wherein the white layer consists essentially of the following components in recited percentages by weight:
- ______________________________________Lipid material about 70 to about 75Water about 18 to about 23Proteinaceous about 3.0 to about 5.0emulsifiersProtein micellar mass about 1.5 to about 2.5Egg white about 1 to about 1.75Gelatin about 0.3 to about 0.5Protein fibres about 15 to about 20______________________________________
