Claims
- 1. A method of processing soybeans in the absence of added water, consisting of breaking raw or green soybeans into pieces, heating said broken raw or green soybeans with superheated steam at a temperature of 120.degree.-200.degree. C. and at atmospheric pressure for a time effective to avoid development of grassy odor while maintaining a satisfactory nitrogen solubility index, and cooling the resulting beans by exposure to the air whereby the beans are free of grassy odor and have at least 80% Nitrogen Solubility Index.
- 2. The method according to claim 1, wherein said heating step is effected at a temperature of 120.degree.-200.degree. C. for 10 to 180 seconds, and said cooling step is effected at a temperature lower than 100.degree. C.
- 3. The method according to claim 2, wherein said heating step is performed at anyone of 120.degree. C. for 180 seconds, at 170.degree. C. for 60 seconds, or at 200.degree. C. for 10 seconds.
