Claims
- 1. A lanthionine-containing bacteriocin composition stabilized against degradation comprising a lanthionine-containing bacteriocin and a thioether compound of the formula II
- R.sup.1 --S--R.sup.2 II
- wherein R.sup.1 is an alkyl group containing 1-6 carbon atoms or ##STR11## n is 0-5 wherein R.sup.3 is hydrogen or ##STR12## x is 1-3; and R.sup.4 is --H, --CH.sub.3, --CH(CH.sub.3).sub.2, --CH.sub.2 CH(CH.sub.3).sub.2, --CH(CH.sub.3)CH.sub.2 CH.sub.3, --CH.sub.2 SH, --CH.sub.2 CH.sub.2 SCH.sub.3, --CH.sub.2 OH, --CH(OH)CH.sub.3, --CH.sub.2 COOH, --(CH.sub.2).sub.2 COOH, --CH.sub.2 CONH.sub.2, --(CH.sub.2).sub.2 CONH.sub.2, --(CH.sub.2).sub.4 NH.sub.2, ##STR13## or --(CH.sub.2).sub.3 -- joined with the nitrogen of R.sup.3 to form a pyrrolidine ring;
- R.sup.2 is ##STR14## wherein R.sup.5 is hydrogen, an amino group or a hydroxyl group and R.sup.6 is hydrogen or ##STR15## wherein R.sup.7 is hydroxy, alkoxy containing 1-6 carbons atoms or ##STR16## and n, x and R.sup.4 are as defined above, with the proviso that if R.sup.3 is hydrogen, or if R.sup.5 is an amino or hydroxyl group, then n is not zero;
- and wherein the compound defined by Formula II is methionine, an analog thereof or a peptide containing methionine or methionine analog residues.
- 2. The composition of claim 1 which further comprises a surfactant.
- 3. The composition of claim 2 wherein the surfactant is a polysorbate.
- 4. The composition of claim 1 which further comprises a chelating agent selected from the group consisting of EDTA, CaEDTA, CaNa.sub.2 EDTA, EGTA, CDTA, DTPA, HEEDTA, EDITEMPA and citrate.
- 5. The composition of claim 4 wherein the chelating agent is EDTA or citrate.
- 6. The composition of claim 1 wherein the bacteriocin is nisin.
- 7. The composition of claim 1 wherein the compound of formula II is methionine.
- 8. The composition of claim 7 wherein the concentration of methionine is in the range of 1 to 50 mM.
- 9. The composition of claim 8 wherein the concentration of methionine is in the range of 1 to 10 mM.
- 10. The composition of claim 1 wherein R.sup.1 is --CH.sub.3 and R.sup.2 is --(CH.sub.2).sub.2 --CH(OH)--COOH.
- 11. A lanthionine-containing bacteriocin composition, stabilized against degradation, comprising the bacteriocin in a concentration range of 0.1 to 1000 .mu.g/ml; a surfactant in a concentration range of 0.1-10%; a chelating agent selected from the group consisting of EDTA, CaEDTA, CaNa.sub.2 EDTA, EGTA, CDTA, DTPA, HEEDTA, EDITEMPA and citrate in a concentration range of 0.1-20 mM; and a thioether stabilizing agent according to claim 1 in a concentration range of 1 mM to 10 mM.
- 12. The composition of claim 1 which further comprises a chelating agent that is an alkylenediamine tetraacetate.
- 13. A lanthionine-containing bacteriocin composition, stabilized against degradation, comprising the bacteriocin in a concentration range of 0.1 to 1000 .mu.g/ml; a surfactant in a concentration range of 0.1-10%; a chelating agent that is an alkylenediamine tetraacetate in a concentrate of 0.1-20 mM; and a thioether stabilizing agent according to claim 1 in a concentration range of 1 mM to 10 mM.
- 14. The composition of claim 11 or 13 wherein the bacteriocin is nisin and the stabilizing agent is methionine.
- 15. A method for stabilizing a lanthionine-containing bacteriocin component of a composition against degradation comprising adding to said composition a compound according to claim 1 in an amount effective to achieve stabilization of said bacteriocin.
