Claims
- 1. Steam-peeling apparatus, comprising:
- a. a steam chamber;
- b. a water source;
- c. a fluid delivery conduit between said water source and said steam chamber;
- d. a chemical reservoir in fluid communication with said fluid delivery conduit, said reservoir containing a cuticle integrity-reducing substance.
- 2. The machine of claim 1, further including means for regulating water flow in said fluid delivery conduit.
- 3. The machine of claim 1, further including means for regulating flow from said chemical reservoir into said fluid delivery conduit.
- 4. The machine of claim 1, further including means for regulating temperature within said steam chamber.
- 5. The machine of claim 1, further including means for regulating pressure within said steam chamber.
- 6. A tomato peeling machine, comprising:
- a. a steam chamber, said steam chamber being inclined from its input end toward its output end and having a feed screw therewithin;
- b. a star valve at said chamber's lower, input end, said star valve being adapted to deliver tomatoes into said steam chamber while preventing significant fluid and pressure loss from said chamber;
- c. a star valve at said chamber's upper, output end, said star valve being adapted to deliver tomatoes out of said steam chamber while preventing significant fluid and pressure loss from said chamber;
- d. means for introducing steam into said steam chamber;
- e. a fluid delivery conduit in fluid communication with said steam chamber, said conduit being connected to a water source;
- f. a chemical reservoir in fluid communication with said fluid delivery conduit;
- g. means for regulating the introduction of chemical from said chemical reservoir into said fluid delivery conduit; and,
- h. means for regulating the flow rate of fluid in said fluid delivery conduit into said steam chamber.
- 7. The apparatus of claim 1, wherein the cuticle integrity-reducing substance is naphthalene sulfonate.
- 8. The apparatus of claim 1, further including means for maintaining said steam chamber's minimum operating fluid level above a point where said fluid delivery conduit meets said steam chamber.
- 9. The apparatus of claim 1, further including means for atomizing fluid where said fluid delivery conduit meets said steam chamber.
- 10. The apparatus of claim 9, wherein said fluid atomizing means is disposed above a maximum condensate level in said steam chamber.
- 11. The apparatus of claim 1, further including means for limiting the rate of fluid flow where said fluid delivery conduit meets said steam chamber.
- 12. The apparatus of claim 1, further including a flow rate-limiting spray nozzle where said fluid delivery conduit meets said steam chamber.
- 13. The apparatus of claim 1, further including a blow-down valve disposed in a lowermost portion of said steam chamber.
