- 15. A waxy wheat starch granule from the plant of claim 1.
- 16. Amylopectin starch from the polyploid waxy wheat plant of claim 12.
- 17. Amylopectin starch from the polyploid waxy wheat plant of claim 13.
- 18. A polyploid waxy wheat plant which has been produced from a parent plant by mutagenesis with a mutagen to produce a mutation in a non-waxy (Wx) gene which encodes a partially active GBSS protein.
- 19. Waxy progeny of the plant of claim 18.
- 20. Seed from the polyploid waxy wheat plant of claim 18, the seed comprising at least one induced waxy allele encoding a partially active GBSS protein.

- 26. The amylopectin starch of claim 23, having a peak viscosity of at least 1600 centipoise.
- 27. A mutant polyploid waxy wheat plant, comprising:
at least two sets of chromosomes, each set of chromosomes having waxy loci; and an induced mutant starch allele present at each waxy locus; the mutant polyploid wheat plant producing a starch having higher peak viscosity than prime starch from an isogenic strain having a wild-type allele at one or more waxy loci, or than amylopectin of prime starch from a fully waxy wheat carrying natural mutant alleles in its two or three genomes.
- 28. Amylopectin starch derived from the mutant polyploid waxy wheat plant of claim 27, which has a peak viscosity temperature of at least 68° C.
