Claims
- 1. A nutritional composition, which comprises:
- (a) an edible carrier comprising an effective amount of an emulsifier capable of forming a bilayer structure; and
- (b) a nutritionally effective amount of a divalent mineral salt spread on the carrier and having the formula:
- MA
- wherein M is a divalent metal selected from the group consisting of iron, calcium, zinc, copper, magnesium, manganese and mixtures thereof, and wherein A is a compatible dicarboxylate anion having no other polar functional groups.
- 2. A food or beverage product fortified with the nutritional composition of claim 1.
- 3. The food or beverage product of claim 2 which comprises an effective amount of a flavor selected from the group consisting of fruit flavors, chocolate flavors, vanilla flavor, cheese flavors, butter flavors, beef flavors, chicken flavors, cinnamon flavors, mocha flavors, peanut flavors and mixtures thereof.
- 4. The composition of claim 1 wherein said divalent mineral salt is selected from the group consisting of ferrous succinate, ferrous fumarate, calcium succinate, calcium fumarate, zinc succinate, zinc fumarate, cuprous succinate, cuprous fumarate, magnesium succinate, magnesium fumarate, manganese succinate, manganese fumarate and mixtures thereof.
- 5. The composition of claim 4 wherein said divalent mineral salt is selected from the group consisting of ferrous fumarate, ferrous succinate, and mixtures thereof.
- 6. A nutritional combination comprising a nutritionally effective amount of the nutritional composition of claim 5 and a nutritionally effective amount of at least one other mineral or vitamin selected from the group consisting of iodine, vitamin A, vitamin C, riboflavin, vitamin B1, vitamin B6, vitamin B12, niacin, pantothenic acid, folic acid, vitamin D, and vitamin E.
- 7. The combination of claim 6 wherein said at least one other mineral or vitamin is selected from the group consisting of iodine and vitamin A.
- 8. The composition of claim 5 wherein said divalent mineral salt comprises from about 10 to about 100% of the RDA of iron.
- 9. The composition of claim 5 wherein said emulsifier is selected from the group consisting of phospholipids, phospholipid-containing compositions, glycoplipids, glycolipid-containing compositions, sorbitan esters of long chain saturated fatty acids, lactic acid esters of long chain saturated fatty acid monoglycerides, diacetyl tartaric acid esters of long chain saturated fatty acid monoglyccrides, bile salts and bile acids selected from the group consisting of chenodeoxycholic acid derivatives and secondary deoxycholic acid derivatives, and mixtures thereof.
- 10. The composition of claim 9 wherein said emulsifier is selected from the group consisting of lecithins, cephalins, and plasmalogens.
- 11. The composition of claim 10 wherein said emulsifier is lecithin.
- 12. The composition of claim 9 wherein said carrier further comprises a bilayer stabilizer selected from the group consisting of animal and plant sterols, triglycerides, monoglycerides, diglycerides, phenolics, sucrose esters of long chain fatty acids and mixtures thereof.
- 13. The composition of claim 12 having a ratio of emulsifier to stabilizer of from about 1:200 to about 25:1.
- 14. The composition of claim 5 wherein said edible carrier comprises said emulsifier coated on an edible substrate selected from the group consisting of starches, cellulose, cellulose derivatives, malt, gelatin, sugars, sugar alcohols, milk solids, creamers, synthetic dairy products, fats, and mixtures thereof.
- 15. The composition of claim 14 wherein said edible substrate is selected from the group consisting of sugars and combinations of sugars with a creamer or fat.
- 16. The composition of claim 15 having a ratio of emulsifier to edible substrate of from about 1:1 to about 1:1000.
- 17. The composition of claim 16 having a ratio of emulsifier to edible substrate of from about 1:10 to about 1:50.
- 18. A nutritional dry chocolate-flavored edible mix, which comprises:
- (a) a flavor enhancing amount of cocoa;
- (b) a nutritionally effective amount of a nutritional composition comprising:
- (1) an edible carrier comprising an effective amount of an emulsifier capable of forming a bilayer structure; and
- (2) a nutritionally effective amount of a divalent mineral salt spread on the carrier and having the formula:

- wherein M is a divalent metal selected from the group consisting of iron, calcium, zinc, copper, magnesium, manganese and mixtures thereof, and wherein A is a compatible dicarboxylate anion having no other polar functional groups;
- (c) from 0 to about 25% milk solids;
- (d) an effective amount of a sweetener.
- 19. The edible mix of claim 18 wherein said divalent mineral salt is selected from the group consisting of ferrous fumarate, ferrous succinate, and mixtures thereof.
- 20. The edible mix of claim 19 wherein said emulsifier is selected from the group consisting of phospholipids, phospholipid-containing compositions, glycoplipids, glycolipid-containing compositions, sorbitan esters of long chain saturated fatty acids, lactic acid esters of long chain saturated fatty acid monoglycerides, diacetyl tartaric acid esters of long chain saturated fatty acid monoglycerides, bile salts and bile acids selected from the group consisting of chenodeoxycholic acid derivatives and secondary deoxycholic acid derivatives, and mixtures thereof.
- 21. The edible mix of claim 20 wherein said emulsifier is selected from the group consisting of lecithins, cephalins, and plasmalogens.
- 22. The edible mix of claim 21 wherein said emulsifier is lecithin.
- 23. The edible mix of claim 19 wherein said edible carrier comprises said emulsifier coated on an edible substrate selected from the group consisting of starches, cellulose, cellulose derivatives, malt, gelatin, sugars, sugar alcohols, milk solids, creamers, synthetic dairy products, fats, and mixtures thereof.
- 24. The edible mix of claim 23 wherein said edible substrate is selected from the group consisting of sugars and combinations of sugars with a creamer or fat.
- 25. The edible mix of claim 23 having a ratio of emulsifier to edible substrate of from about 1:10 to about 1:50.
- 26. The edible mix of claim 19 which comprises from about 3.5 to about 16% cocoa.
- 27. The edible mix of claim 26 which comprises from about 55 to about 70% sugar.
- 28. The edible mix of claim 26 which is in the form of a beverage mix.
