Claims
- 1. A process for cleaning a beverage tank comprising:a) forming cleaning solution comprising at least one laccase and at least one peroxidase; and b) contacting the beverage tank with the cleaning solution.
- 2. The process of claim 1, wherein the beverage tank contains residue from a beverage obtained by fermentation.
- 3. The process of claim 1 wherein said cleaning solution comprises 0.001 to 1 percent by weight of enzymes.
- 4. The process of claim 3 wherein said cleaning solution comprises 0.002 to 0.3 percent by weight of enzymes.
- 5. The process of claim 3 wherein said cleaning solution comprises 0.005 to 0.5 percent by weight of two or more enzymes.
- 6. The process of claim 1 wherein said cleaning solution has a pH of from 2 to 11.
- 7. The process of claim 6 wherein said cleaning solution has a pH of from 3 to 10.
- 8. The process of claim 1 wherein said cleaning solution further comprises nonionic, anionic, or cationic surfactants; monomeric, oligomeric, or polymeric phosphates; silicates; organic complexing agents; or mixtures thereof.
- 9. The process of claim 1 wherein the beverage tank is contacted with said cleaning solution for from 30 minutes to 5 hours.
- 10. The process of claim 1 wherein the beverage tank is contacted with said cleaning for from 10 to 60 minutes.
- 11. The process of claim 1 wherein the temperature of said cleaning solution is from −5° C. to +85° C.
- 12. The process of claim 11 wherein the temperature of said cleaning solution is from 20° C. to 70° C.
- 13. The process of claim 1 wherein said cleaning solution contacts the beverage tank in a CIP (cleaning in place) process.
- 14. The process of claim 1 wherein said cleaning solution is formulated for use as a thin film cleaner.
- 15. The process of claim 2 wherein said residue comprises yeasts, tannins, hops resins, or a mixture thereof.
- 16. The process of claim 1, wherein the beverage tank comprises fermentation or storage tank.
