Claims
- 1. Apparatus for batch process cooking and packing pieces of a food product such as fruits or vegetables, comprising
- means for collecting a batch comprising a predetermined quantity of uncooked said food product;
- a cooking chamber having a selectively openable and closable entrance port and a selectively openable and closable delivery port and containing a quantity of liquid for use with said food product such that said liquid cushions the fall of said food product pieces that enter said cooking chamber;
- means for depositing by gravity flow said quantity of food product into said cooking chamber through said entrance port when said entrance port is open;
- heat exchanger means for heating said liquid to a cooking and sterilizing temperature;
- means for recirculating said liquid through said heat exchanger means and said cooking cheer to contact said quantity of said food product, whereby the food product contacted by the heated liquid will be heated to a cooking and sterilizing temperature;
- means for removing a sufficient quantity of said liquid from said cooking chamber such that the total combined volume of said liquid and said cooked food product remaining substantially equals the quantity of said food product and liquid desired to be deposited into a predetermined shipping container for said food product and liquid;
- means for positioning said shipping container subjacent said cooking chamber delivery port to receive said remaining liquid and cooked food product;
- means for delivering said food product and said liquid from said cooking chamber into said shipping container; and
- means for sealing said shipping container after said reception of said liquid and cooked food product.
- 2. The apparatus of claim 1 wherein said recirculating means comprises means for measuring the temperature of said heated liquid at a location generally proximal the exit of said heated liquid from said cooking chamber.
- 3. The apparatus of claim 1 further comprising means for controlling the acidity of said recirculating liquid.
- 4. The apparatus of claim 1 further comprising steam ejector means for further heating said liquid after said liquid has passed through said heat exchanger.
- 5. The apparatus of claim 1 wherein said liquid recirculating means comprises means for selectively maintaining said liquid at a predetermined level within said cooking chamber.
- 6. The apparatus of claim 5 wherein said liquid level maintaining means comprises a liquid supply tank for both receiving said liquid from said cooking chamber and then feeding said liquid from said supply tank to said cooking chamber.
- 7. The apparatus of claim 6 wherein said recirculating means further comprises pump means for maintaining substantially continuous circulation of said liquid in pipes connecting said liquid supply tank and said cooking chamber.
- 8. The apparatus of claim 5 wherein said liquid recirculating means further comprises
- filter means positioned within said cooking chamber, said filter means comprising
- a disc member having an axis of rotation generally transverse to the surface thereof and having a plurality of apertures extending through said disc and being sized to per, nit said liquid to pass therethrough while blocking passage of said food product,
- a filter chamber slidably and sealingly receiving the periphery of said disc with one side of said disc facing inwardly of said filter chamber, said filter chamber having a liquid withdrawal conduit connected thereto, whereby liquid passing through said disc apertures is withdrawn from said chamber, and
- means for rotatably driving said disc about said axis.
- 9. The apparatus of claim 8 wherein said filter means is oriented with said axis of rotation generally horizontal and positioned within said cooking cheer such that said liquid withdrawal conduit is below said predetermined maximum level of said liquid.
- 10. The apparatus of claim 9 further comprising means for directing at least one stream of said liquid at said disc apertures from within said filter chamber and at a location above said predetermined maximum level of said liquid, such that said liquid stream urges pieces of said food product lodged in said apertures outwardly of said filter chamber.
- 11. The apparatus of claim 8 wherein said filter comprises a pair of said rotatably driven disc members positioned generally coaxially and spaced apart with their respective said peripheries slidably and sealingly received by said filter chamber on opposing sides thereof.
- 12. The apparatus of claim 1 wherein
- said liquid removing means further comprises means for substantially draining said heated liquid from said cooking chamber, and wherein
- said apparatus further comprises means for introducing a cold liquid into engagement with said product, whereby said cold liquid in contact with said product will cool said product by absorbing heat therefrom.
- 13. The apparatus of claim 12 wherein said cold liquid introducing means comprises means for recirculating said cold liquid through a heat exchanger to remove from said liquid heat gained from said contact with said product.
- 14. The apparatus of claim 13 wherein said cold liquid recirculating means further comprises a cold liquid supply reservoir for receiving said cold liquid from said contact with said product and for supplying said cold liquid to said heat-removing heat exchanger.
- 15. The apparatus of claim 14 further comprising means for maintaining within said cold liquid supply reservoir a substantially nonoxidizing atmosphere.
- 16. The apparatus of claim 13 wherein said cold liquid recirculating means further comprises
- means, positioned in the path of said recirculation subsequent to said heat-removing heat exchanger, for measuring the temperature of said recirculating liquid, and
- means for adjusting the operation of said heat-removing heat exchanger to maintain a predetermined temperature of said liquid leaving said heat exchanger.
- 17. The apparatus of claim 12 wherein said cold liquid introducing means further comprises a product cooling chamber separate from said cooking cheer for receiving said cooked food product from said cooking chamber for subsequent cooling prior to delivery of said product into said shipping container.
- 18. The apparatus of claim 17 wherein said cold liquid introducing means comprises means for recirculating said cold liquid through a heat exchanger to remove from said liquid heat gained from said conduct with said product.
- 19. The apparatus of claim 18 wherein said recirculating means further comprises
- means, positioned in the path of said recirculation subsequent to said heat-removing heat exchanger, for measuring the temperature of said recirculating liquid, and
- means for adjusting the operation of said heat-removing heat exchanger to maintain a predetermined temperature of said liquid leaving said heat exchanger.
- 20. The apparatus of claim 18 wherein said cold liquid recirculating means further comprises a cold liquid supply reservoir for receiving said cold liquid from said contact with said product and for supplying said cold liquid to said heat-removing heat exchanger.
- 21. The apparatus of claim 20 further comprising means for maintaining within said cold liquid supply reservoir a substantially nonoxidizing atmosphere.
- 22. The apparatus of claim 12 wherein said liquid recirculating means further comprises
- filter means positioned within said cooking chamber, said filter means comprising
- a disc member having an axis of rotation generally transverse to the surface thereof and having a plurality of apertures extending through said disc and being sized to permit said liquid to pass therethrough while blocking passage of said food product,
- a filter chamber slidably and sealingly receiving the periphery of said disc with one side of said disc facing inwardly of said filter chamber, said filter chamber having a liquid withdrawal conduit connected thereto, whereby liquid passing through said disc apertures is withdrawn from said chamber, and
- means for rotatably driving said disc about said axis.
- 23. The apparatus of claim 22 wherein said filter means is oriented with said axis of rotation generally horizontal and positioned within said cooking chamber such that said liquid withdrawal conduit is below said predetermined maximum level of said liquid.
- 24. The apparatus of claim 23 further comprising means for directing at least one stream of said liquid at said disc apertures from within said filter chamber and at a location above said predetermined maximum level of said liquid, such that said liquid stream urges pieces of said food product lodged in said apertures outwardly of said filter cheer.
- 25. The apparatus of claim 23 wherein said filter comprises a pair of said rotatably driven disc members positioned generally coaxially and spaced apart with their respective said peripheries slidably and sealingly received by said filter chamber on opposing sides thereof.
- 26. The apparatus of claim 12 wherein said delivering means comprises a sterilizing chamber connected to said cooking chamber delivery port and sealingly engaging an upper portion of said shipping container for applying a sterilizing agent to said upper portion and the interior of said shipping container, whereby said liquid and said cooled food product are delivered into said container in an aseptic manner.
- 27. The apparatus of claim 26 wherein said container sealing means is positioned within said sterilizing chamber, whereby the filled container may be sealed in an aseptic manner.
