Claims
- 1. An apparatus for producing co-extruded sausages which comprises:
- a) means for co-extruding a substantially uniform layer of collagen gel around an extruded edible product;
- b) a liquid coagulating bath containing a chemical coagulating agent for chemically coagulating the co-extruded collagen gel;
- c) a holding chamber disposed downstream of the coagulating bath for allowing substantial completion of coagulation of the collagen gel in the absence of hot air drying; and
- d) shower means for showering said liquid coagulating agent onto the co-extruded collagen gel and edible product within the holding chamber.
- 2. An apparatus for producing links of edible product comprising:
- means for co-extruding a substantially uniform coating of collagen gel around an extruded edible product to form a co-extruded coated edible product;
- means for supporting and feeding the co-extruded coated edible product downwardly in a helical path;
- means for applying a coagulating agent to the coated edible product as it is fed in said helical path; and
- means for mechanically linking said coated edible product into links.
- 3. The apparatus of claim 2, wherein said means for applying the agent comprises means for showering the coagulating agent onto the coated edible product as it is fed in said helical path.
- 4. An apparatus for producing a linked co-extruded edible product from an edible fluid product and a collagen gel including a collagen and an acid, comprising:
- a co-extruder for co-extruding a coating of said collagen gel around a continuous length of extruded edible fluid product;
- coagulating means for coagulating said coating of collagen gel for a predetermined coagulation time while said edible fluid product is maintained in a fluid state, said predetermined coagulation time being sufficient to form a collagen casing having a strength which is sufficiently strong to allow mechanical twist-linking of said casing and edible fluid product at spaced points along said length; said coagulation means including, at least in part:
- a conveyor for feeding the co-extruded collagen gel and edible fluid product along a path extending away from said co-extruder,
- a liquid coagulating bath containing a chemical coagulating agent for chemically coagulating the coating of co-extruded collagen gel around the extruded edible fluid product, and
- means for contacting the coating of collagen gel with said chemical coagulation agent, as said co-extruded collagen gel and edible fluid product are fed along said path by said conveyor; and
- a mechanical linking device for linking said casing and edible fluid product at said spaced points while said co-extruded edible fluid product is still in said fluid state and while displacing said edible fluid product away from said spaced points;
- said conveyor including, at least in part:
- a trough positioned along said path for holding at least some of said liquid coagulating agent; and
- a holding chamber disposed along said path, downstream of said trough for receiving at least some of said liquid coagulating agent; and
- said holding chamber being defined by a downwardly extending helical flume for supporting said co-extruded collagen gel and edible fluid product as they are fed along said path, and including means for flowing said liquid coagulating agent down said helical flume and into contact with said collagen coating.
- 5. An apparatus for producing a linked co-extruded edible product from an edible fluid product and a collagen gel including a collagen and an acid, comprising:
- a co-extruder for co-extruding a coating of said collagen gel around a continuous length of extruded edible fluid product;
- coagulating means for coagulating said coating of collagen gel for a predetermined coagulation time while said edible fluid product is maintained in a fluid state, said predetermined coagulation time being sufficient to form a collagen casing having a strength which is sufficiently strong to allow mechanical twist-linking of said casing and edible fluid product at spaced points along said length; said coagulation means including, at least in part:
- a conveyor for feeding the co-extruded collagen gel and edible fluid product along a path extending away from said co-extruder,
- a liquid coagulating bath containing a chemical coagulating agent for chemically coagulating the coating of co-extruded collagen gel around the extruded edible fluid product, and
- means for contacting the coating of collagen gel with said chemical coagulation agent, as said co-extruded collagen gel and edible fluid product are fed along said path by said conveyor; and
- a mechanical linking device for linking said casing and edible fluid product at said spaced points while said co-extruded edible fluid product is still in said fluid state and while displacing said edible fluid product away from said spaced points;
- said conveyor including, at least in part:
- a trough positioned along said path for holding at least some of said liquid coagulating agent; and
- a holding chamber disposed along said path, downstream of said trough for receiving at least some of said liquid coagulating agent; and
- said holding chamber is defined by a downwardly extending helical flume for supporting said co-extruded collagen gel and edible fluid product as they are fed along said path, and includes shower means for showering said liquid coagulating agent onto said collagen coating as the co-extruded collagen gel and edible fluid product are fed down said helical flume.
- 6. An apparatus for producing a co-extruded edible product from an edible fluid product and a collagen gel, comprising:
- a co-extruder for co-extruding a coating of said collagen gel around a continuous length of extruded edible fluid product; and
- coagulating means for coagulating said coating of collagen gel for a predetermined coagulation time while said edible fluid product is maintained in a fluid state, said coagulation means including, at least in part:
- a conveyor for feeding the co-extruded collagen gel and edible fluid product along a path extending away from said co-extruder, said conveyor including, at least in part, a downwardly extending helical flume for supporting said co-extruded collagen gel and edible fluid product as they are fed along said path,
- a liquid coagulating bath containing a chemical coagulating agent for chemically coagulating the coating of co-extruded collagen gel around the extruded edible fluid product, and
- means for contacting the coating of collagen gel with said chemical coagulation agent, as said co-extruded collagen gel and edible fluid product are fed down said helical flume.
- 7. The apparatus according to claim 6, wherein the means for contacting the coating of collagen gel with said chemical coagulation agent includes means for flowing said coagulating agent down said helical flume and into contact with said collagen coating.
- 8. The apparatus according to claim 6, wherein the means for contacting the coating of collagen gel with said chemical coagulation agent includes shower means for showering said liquid coagulating agent onto said collagen coating as the co-extruded collagen gel and edible fluid product are fed down said helical flume.
- 9. An apparatus for producing a co-extruded edible product from an edible fluid product and a collagen gel, comprising:
- a co-extruder for co-extruding a coating of said collagen gel around a continuous length of extruded edible fluid product; and
- coagulating means for coagulating said coating of collagen gel for a predetermined coagulation time while said edible fluid product is maintained in a fluid state, said coagulation means including, at least in part:
- a conveyor for feeding the co-extruded collagen gel and edible fluid product along a path extending away from said co-extruder, said conveyor including, at least in part, a downwardly extending trough for supporting said co-extruded collagen gel and edible fluid product as they are fed along said path,
- a liquid coagulating bath containing a chemical coagulating agent for chemically coagulating the coating of co-extruded collagen gel around the extruded edible fluid product, and
- shower means for showering the coating of collagen gel with said chemical coagulation agent, as said co-extruded collagen gel and edible fluid product are fed down said trough.
- 10. The apparatus according to claim 9 wherein said coagulating means are arranged for coagulating said coating of collagen gel for a coagulation time of substantially 40 seconds.
- 11. An apparatus for producing a linked co-extruded edible product from an edible fluid product and a collagen gel including a collagen and an acid, comprising:
- a co-extruder for co-extruding a coating of said collagen gel around a continuous length of extruded edible fluid product;
- coagulating means for coagulating said coating of collagen gel for a predetermined coagulation time while said edible fluid product is maintained in a fluid state, said predetermined coagulation time being sufficient to form a collagen casing having a strength which is sufficiently strong to allow mechanical twist-linking of said casing and edible fluid product at spaced points along said length; said coagulation means including, at least in part:
- a conveyor for feeding the co-extruded collagen gel and edible fluid product along a path extending away from said co-extruder,
- a liquid coagulating bath containing a chemical coagulating agent for chemically coagulating the coating of co-extruded collagen gel around the extruded edible fluid product, and
- shower means for showering the coating of collagen gel with said chemical coagulation agent, as said co-extruded collagen gel and edible fluid product are fed along said path by said conveyor; and
- a mechanical linking device for linking said casing and edible fluid product at said spaced points while said co-extruded edible fluid product is still in said fluid state and while displacing said edible fluid product away from said spaced points.
- 12. The apparatus according to claim 11 wherein said coagulating means are arranged for coagulating said coating of collagen gel for a coagulation time of substantially 40 seconds.
- 13. The apparatus according to claim 11, wherein said conveyor includes, at least in part:
- a trough positioned along said path for holding at least some of said liquid coagulating agent; and
- a holding chamber disposed along said path, downstream of said trough for receiving at least some of said liquid coagulating agent.
