Claims
- 1. A coated food product comprising:
- a food emulsion;
- a collagen gel layer surrounding said food emulsion;
- a brine layer surrounding said collagen layer, said brine layer comprising a highly dissolvable salt selected from the group consisting of potassium carbonate and dipotassium phosphate, said salt having a dissolution rate of at least 8 moles per liter water at 20.degree. C.
- 2. A coated food product according to claim 1 wherein the food emulsion comprises a product selected from the group consisting of meat, fish, vegetable, or cheese.
- 3. A coated food product according to claim 1 wherein the collagen gel comprises collagen and liquid smoke.
- 4. A coated food product according to claim 1 wherein the collagen gel layer comprises a substantially uniform layer of a collagen-containing gel acidified with an inorganic acid.
- 5. A coated food product according to claim 4 wherein said inorganic acid is selected from the group consisting of hydrochloric acid and sulfuric acid.
- 6. A coated food product according to claim 1 wherein the collagen gel layer has a dry matter of 3-25%.
- 7. A coated food product according to claim 1 wherein the collagen gel layer comprises a substantially uniform layer of a collagen-containing gel acidified with an inorganic acid and wherein the collagen gel layer has a dry matter of 3% to 25%.
