Claims
- 1. As a chemical acidogen system for supplying acid to proteincontaining foodstuffs and leavening to bakery doughs, hydrogen peroxide in combination with at least one aliphatic C.sub.2-6 dione wherein the carbonyl groups are vicinal to each other, said dione conforming to one of the structures: ##STR2## wherein R and R' are each hydrogen or C.sub.1-2 alkyl.
- 2. The chemical acidogen system of claim 1 wherein the dione is glyoxal.
- 3. The chemical acidogen system of claim 1 wherein the dione is pyruvaldehyde.
- 4. The chemical acidogen system of claim 1 wherein the dione is diacetyl.
