Claims
- 1. A liquid beverage comprising an edible liquid and an extruded fiber-containing intermediate, said fiber-containing intermediate comprising:from about 25 to about 99% by weight of a soluble fiber source comprising psyllium; and from about 1 to 75% by weight of an insoluble fiber source; wherein said intermediate comprises an agglomeration formed by simultaneously co-extruding and cooking said soluble fiber and said insoluble fiber, said agglomeration having a mean particle size ranging from about 25 to about 425 microns.
- 2. The extruded intermediate of claim 1, further comprising from about 0 to about 50% by weight of a starch source.
- 3. The extruded intermediate of claim 1, wherein said fiber-containing intermediate further comprises from about 0 to about 20% by weight of a simple sugar.
- 4. The extruded intermediate of claim 1, wherein the mean particle size of said fiber-containing intermediate is from about 75 to about 125 microns.
- 5. The extruded intermediate of claim 1, wherein said soluble fiber source is selected from the group consisting of psyllium, β-glucan, and farinaceous grains.
- 6. The extruded intermediate of claim 5, wherein said soluble fiber source is psyllium.
- 7. The extruded intermediate of claim 5 wherein said insoluble fiber source is a farinaceous grain.
- 8. The extruded intermediate of claim 7, wherein said farinaceous grain is at least one member selected from the group consisting of oats, wheat, barley, and corn.
- 9. A baked good comprising an extruded fiber-containing intermediate, said fiber-containing intermediate comprising an agglomeration co-extruded and cooked and having from about 25 to about 99% by weight of a soluble fiber source comprising psyllium; and from about 1 to about 75% by weight of an insoluble fiber source, wherein the mean particle size of said fiber-containing intermediate is from about 50 to about 300 microns.
- 10. The baked good of claim 9, wherein the mean particle size is from about 100 to about 250 microns.
- 11. A fiber-containing liquid beverage comprising:an edible liquid having dispersed therein a co-extruded fiber-containing intermediate, said intermediate comprising, on a dry weight basis, from about 25 to about 99% by weight of a soluble fiber source comprising psyllium; and from about 1 to about 75% by weight of an insoluble fiber source; wherein the mean particle size of said intermediate ranges from about 30 to about 180 microns.
- 12. A fiber-containing baked good comprising:from about 1 to 99% of a co-extruded and cooked fiber-containing intermediate, said intermediate comprising, on a dry weight basis, from about 25 to about 99% psyllium; and from about 1 to about 75% by weight of an insoluble fiber source; wherein the mean particle size of said intermediate is from about 50 to about 300 microns.
- 13. A method of preparing an extruded fiber-containing intermediate comprising:simultaneously wet extruding and cooking a mixture comprising from about 25 to 99% by weight of a soluble fiber source comprising psyllium; and from about 1 to 75% by weight of an insoluble fiber source; drying the extrudate to a water content of from about 3 to 12% by weight; and milling the dried extrudate to obtain particles having a mean particle size of about 30 to about 180 microns.
- 14. A method of preparing a fiber-containing liquid drink comprising mixing the intermediate of claim 1 with an edible liquid.
- 15. A method of preparing a fiber-containing baked good comprising:simultaneously wet extruding and cooking a mixture comprising from about 25 to about 99% by weight of a soluble fiber source and from about 1 to about 75% by weight of an insoluble fiber source to form an extrudate; drying the extrudate to a water content of from 3 to about 12 percent by weight; milling the dried extrudate to obtain particles having a mean particle size of from about 25 to 425 microns; blending the milled extrudate together with an oil; adding the oil and extrudate blend to conventional baking ingredients to form a mixture; and baking the mixture.
- 16. A liquid beverage comprising an edible liquid andan extruded psyllium-containing intermediate, the intermediate comprising, on a dry weight basis, from about 25 to about 99% by weight psyllium; and from about 1 to about 75% by weight of an insoluble fiber source; wherein the mean particle size of the intermediate is from about 30 to about 180 microns.
- 17. The liquid beverage of claim 16, wherein said intermediate further comprises an edible acid.
- 18. The liquid beverage of claim 16, wherein said intermediate comprises from about 60 to about 80% psyllium.
- 19. The liquid beverage of claim 17, wherein said edible acid is citric acid.
- 20. A method of preparing a fiber-containing liquid beverage comprising:simultaneously wet extruding and cooking a mixture comprising from about 25 to about 99% by weight of a soluble fiber source and from about 1 to about 75% by weight of an insoluble fiber source to form an extrudate; drying the extrudate to a water content of from about 3 to about 12 percent by weight; milling the dried extrudate to obtain particles having a mean particle size of from about 30 to 180 microns; and blending the milled extrudate together with an edible liquid to produce the liquid beverage.
